The Best Keto Dinner Rolls 2021

The Best Keto Dinner Rolls are so soft, fluffy and delicious! They aren't like any other keto breads.

Typically keto bread items are tougher and have more chew but these are easy to pull-apart are are so so soft. They are great served with a little butter. 

I originally made these soft keto dinner rolls. They weren't bad at all. They were quite tasty.

But since then I've developed a Keto Bread and Pastry Flour that's now available for purchase on my website. The flour is a blend that I worked on for probably a year or more! 

It involved a ton of testing different ingredient ratios and finding what combination could produce the best texture and flavour closest to that of traditional bread and pastry items.

This flour is my pride and joy. It's amazing for making keto alternatives to all your favourite things like bread, buns, pizza crust, pie crust, croissants, turnovers, cinnamon rolls and so much more. 

The best keto dinner rolls are actually super easy to make. The flour does most of the work for you. All you need to do is add a few extra ingredients and follow the simple directions. 

The best part is that this keto dinner roll dough doesn't require much kneading so you can make it easily without a stand mixer/it's great if you are new to bread making or baking with yeast.

These keto dinner rolls pair well with both sweet or savoury toppings. Sometimes I'll even melt a little bit of cheese on the tops of them or mix some in with parmesan and other italian spices for a fun twist. 

In the video and recipe below I make 6 rolls. I just whisk an egg and use 2 tbsp or 30g of it instead of a whole egg. But if you'd like to keep it simple, just double the recipe and use a whole egg!

Ingredients In The Best Keto Dinner Rolls 2021

  • Mouthwatering Motivation Keto Bread & Pastry Flour – A keto flour I developed to be used in place of white flour in most keto bread and pastry items. It gives baked goods the taste and texture most similar to that of white flour. It also keeps keto baking simple. Just one flour for every recipe!
  • Almond Milk – You can really use any milk here. Light coconut milk or almond milk are both great options. My favourite is Silk's Almond + Cashew Protein Milk because it has the most similar profile to that of whole milk, which is traditionally used in bread rolls. For the yeast, make sure your milk is heated to around 110* if you have a thermometer. Other-wise, just make sure it's not too hot to the touch. 
  • Dry Active Yeast – Make sure your yeast is fresh. If it does't bubble or froth up a bit in the warm milk, it may be expired. I store mine in the freezer to keep it fresh for much longer. 
  • White Sugar – This is required for the yeast to activate. The yeast consumes it and it's converted to CO2 and alcohol so please don't be afraid of adding it to your keto recipes. You can even use 1 tbsp inulin instead if you'd prefer.
  • Powdered Monkfruit Sweetener – This is my favourite keto sweetener, but any sweetener will work in this recipe.
  • Egg – Make sure your egg is room temperature for best results.
  • Butter – I used salted for this recipe but unsalted also works just fine. 
  • Salt

Tips For Making The Best Keto Dinner Rolls

  • Make sure to use almond milk around 110*F for your yeast o activate best. This is typically quite warm but not too hot that you couldn't put your finger in the water comfortably.
  • This keto dinner roll dough doesn't need a lot of kneading so if you are using a stand mixer for the recipe, use a low setting and be careful not to over-knead the dough. It should feel elastic and spring back when you lightly press a finger into it once it's done being kneaded. 
  • I like to use salted butter for the melted butter portion of this recipe. If using unsalted butter, these can be really tasty with a tiny sprinkle of flaky sea salt on top after you've brushed them with butter.

How To Store The Best Keto Dinner Rolls 

  • Store these dinner rolls in a ziplock bag at room temperature for up to 3 days OR freeze and thaw as desired. You can microwave them to re-heat them or just let them thaw on the counter.

The Best Keto Dinner Rolls 2021

Serves: 6 Dinner Rolls

Ingredients:

  • 1/2 cup + 1 tbsp warm almond milk, 140ml (I use Silk Protein Almond + Cashew Milk)
  • 1 tsp dry active yeast, 4g
  • 1 tsp white sugar, 4g (NECESSARY for the yeast to activate, you can also use 1 tbsp inulin instead)
  • 2 tsp powdered monkfruit sweetener (or another sweetener)
  • 2 tbsp of a whisked egg at room temperature, 30g
  • 1 3/4 cup Keto Bread and Pastry Flour, 188g (I recommend weighing it if you have a food scale)
  • 1/2 tsp salt
  • 2 tbsp softened butter, cut into 4-6 small pieces, 30g
  • Extra butter for brushing/greasing

Directions:

  1. Add the almond milk to a large microwavable bowl, microwave until warm but not too hot that you can't put your finger in it. (~20-30s) almond milk
  2. Sprinkle the yeast and sugar over the almond milk, add the powdered sweetener as well. Give it a quick whisk to combine.almond milk yeast
  3. Cover the bowl with saran wrap and leave it for ~3min or until the mixture is bubbly/frothy. almond milk yeast mixture foamy activated yeast
  4. Add the 2 tbsp of whisked egg, keto flour and salt to the bowl. keto flour, egg, yeast
  5. Use a spatula or spoon to stir everything until it begins to form a thick dough. Once it's too thick to stir, use your hands to begin gently kneading the ingredients together. keto flour yeastketo bread dough
  6. Once your dough has partially come together, you can also add the softened butter pieces and just use your hand to knead them into the dough (don't worry if this is a bit messy). keto butter bread dough
  7. Continue to knead the dough just until the butter is incorporated and it's relatively smooth and elastic. If you need to add a touch of additional warm almond milk, you can always do so. Just be careful not to over-do it.keto yeast bread dough
  8. Form your dough into a rough ball. Grease a new clean bowl and turn your dough in the bowl to grease it before covering it with plastic wrap/a dish towel. keto yeast bread dough keto vital wheat gluten dough
  9. Set the dough somewhere warm to rise for ~1 hour or until doubled in size. (I usually heat a cup of water in the microwave for about 1 min, then place my dough inside beside the water and close the door).
  10. After 1 hour or when the dough has doubled, punch it down, remove it and set it on a greased surface. (I use a piece of greased parchment paper). keto yeast vital wheat gluten dough
  11. Break or cut the dough into 6 relatively even pieces. Roll and pinch each piece to form a ball shape. Set the finished balls of dough in a greased baking dish (roll to coat them in oil) spaced a little ways apart.   12. Near the end of the rising time, pre-heat the oven to 325*F. Once the rolls are done rising, uncover them and bake them on the top rack of your oven (if your oven bakes from the bottom up or on a lower rack if your oven tends to bake more quickly from the top down).
