
KETO 1 MINUTE CINNAMON ROLLS
Soft, gooey, doughy delicious keto cinnamon rolls made in minutes. Just 160 calories and 2.6 NET carbs.

These Keto 1 Minute Cinnamon Rolls make a great snack when you're craving something sweet but don't have a lot of time (ahem, or patience) to prepare something.
Let's be honest, cinnamon rolls are delicious but they aren't the easiest dessert to prepare, let alone trying to make a keto version.
I love my original Keto Cinnamon Rolls recipe but sometimes you want a dessert that's just enough for one serving, to kick a craving without spending your whole day in the kitchen.
This is that dessert. I still can't get over how great the texture and flavour of this keto cinnamon roll recipe is. These almost remind me of the McDonald's Cinnabon Delights.
Long-story short, if you're a cinnabon or cinnamon roll fan but hate the process of making them, this recipe is for you.
Ingredients In Keto 1 Minute Cinnamon Rolls
- Keto Bread and Pastry Flour – This is a keto flour alternative to white flour that I developed and is now available for purchase on my website. It acts and tastes much more like white flour than almond or coconut flour and gives baked goods a lightness and more “rise” than other low carb flours. It can be used in all kinds of pastries and breads including; croissants, cinnamon rolls, pizza crust, flatbreads, dinner rolls, bagels, muffins, cakes, pies etc.
- Powdered Monkfruit Sweetener – My favourite sweetener to bake with. It has the closest flavour to regular white sugar in my opinion. The powdered blends great into any dessert.
- Baking Powder – This is replacing what normally would be the yeast in traditional cinnamon rolls. It causes our little mini cinnamon rolls to rise and puff-up in the microwave.
- Cinnamon – You can't have cinnamon rolls without cinnamon. We use this in both the filling and in the dough itself.
- Salt – Salt brings out the flavour of the rest of the ingredients!
- Almond Milk – You can really use any milk in this recipe. This is just an easy one! Light cream, light coconut milk, cashew milk, oat milk, etc all work too.
- Butter – I used salted butter for mine but unsalted works just fine as well! Adding this to the dough softens it and gives us that soft, pillowy cinnamon roll texture we all know and love.
- Sukrin Gold Sweetener – This is my favourite brown sugar replacement. It's got a great texture and flavour. 1 tbsp goes a long way in this recipe!
- Arrowroot Starch – This is optional, it's used to thicken the filling so it doesn't spill out everywhere in the microwave. But if you aren't going for perfect presentation, it's completely optional. Cornstarch will also work here.

Tips For Making Keto 1 Minute Cinnamon Rolls
- Add a little more almond milk to the dough if absolutely needed but careful not to over-do it or your dough will spread too much in the microwave.
- When kneading the dough, you can do it on a flat surface to make it easier. Try not to over-knead your dough to wear it becomes too elastic or it may be hard to roll out.
- If you don't have sukrin gold, you can use swerve brown in place of it or 1 tbsp regular sweetener plus a few drops of molasses.
- Every microwave is different. Mine microwaves quite quickly so 55s may not be enough time for everyone. Adjust as needed.
How To Store Keto 1 Minute Cinnamon Rolls
- These cinnamon rolls are best served warm.
- If you'd like to eat them later, either prepare the cinnamon rolls and refrigerate until you plan to microwave them OR re-heat already prepared rolls in the microwave for 15-20s.

Keto 1 Minute Cinnamon Rolls
Serves: 1
Ingredients:
- 3 1/2 tbsp Keto Bready & Pastry Flour, 30g
- 1 tsp powdered monkfruit sweetener, 5g
- 1/4 tsp baking powder
- pinch of cinnamon
- pinch of salt
- 1 tbsp + 1 tsp almond milk, 20g (Add a couple extra drops ONLY if needed)
- 1 tsp butter, softened, 5g
Filling
- 1 tsp melted butter, 5g
- 1 tbsp sukrin gold sweetener, 12g
- 1/8 – 1/4 tsp cinnamon
- 1/4 tsp arrowroot starch (or cornstarch, optional)
Simple Glaze (Optional):
- 2 tbsp powdered monkfruit sweetener, 20g
- 2 tsp almond milk (or more to thin it out), 10g
Directions:
- In a small bowl, mix together the flour, sweetener, baking powder, cinnamon and salt.
- Add the milk and stir until a soft dough forms. Use your hands to knead the dough until it comes together better (~1 minute).
- Add the softened butter and continue to knead it. (~1min more).
- Form the dough into a ball and place it on a piece of parchment paper.
- Put another piece of parchment paper on top and use a rolling pin to roll it into a rectangle.
- Mix the filling ingredients together in another small bowl and then sprinkle it over the dough. Use your hands to almost rub it into the dough/spread it out as it will be a thicker filling and seem like not a lot at first.
- Roll the dough up from the longest side to the other long side and slice with a sharp knife into 3 pieces.
- Turn the pieces cut-side up and use your hand to flatten each one down a bit as they will puff up in the microwave.
- Place the 3 little rolls cut-side up in a small microwaveable bowl or dish and microwave for ~50s or longer depending on your microwave.
- Serve warm as they are or make a simple glaze by mixing together sweetener and almond milk. Enjoy your Keto 5 Minute Cinnamon Rolls!

Are you sure it is okay to add molasses? Molasses is derived from the process of refining sugar and is actually a form of liquid cane sugar. Some products I have seen have up to 14 carbs (with 0 fiber) in just 1 tbsp.
