The Best Keto Dinner Rolls 2021

Soft and fluffy pull-apart keto dinner rolls like no other!

Ingredients

  • 1/2 cup + 1 tbsp warm almond milk 140ml (I use Silk Protein Almond + Cashew Milk)
  • 1 tsp dry active yeast 4g
  • 1 tsp white sugar 4g (NECESSARY for the yeast to activate, you can also use 1 tbsp inulin instead)
  • 2 tsp powdered monkfruit sweetener or another sweetener
  • 2 tbsp of a whisked egg at room temperature 30g
  • 1 3/4 cup Keto Bread and Pastry Flour 188g (I recommend weighing it if you have a food scale)
  • 1/2 tsp salt
  • 2 tbsp softened butter cut into 4-6 small pieces, 30g
  • extra butter for brushing/greasing

Instructions

  • Add the almond milk to a large microwavable bowl, microwave until warm but not too hot that you can't put your finger in it. (~20-30s)
  • Sprinkle the yeast and sugar over the almond milk, add the powdered sweetener as well. Give it a quick whisk to combine.
  • Cover the bowl with saran wrap and leave it for ~3min or until the mixture is bubbly/frothy.
  • Add the 2 tbsp of whisked egg, keto flour and salt to the bowl.
  • Use a spatula or spoon to stir everything until it begins to form a thick dough. Once it's too thick to stir, use your hands to begin gently kneading the ingredients together.
  • Once your dough has partially come together, you can also add the softened butter pieces and just use your hand to knead them into the dough (don't worry if this is a bit messy).
  • Continue to knead the dough just until the butter is incorporated and it's relatively smooth and elastic. If you need to add a touch of additional warm almond milk, you can always do so. Just be careful not to over-do it.
  • Form your dough into a rough ball. Grease a new clean bowl and turn your dough in the bowl to grease it before covering it with plastic wrap/a dish towel.
  • Set the dough somewhere warm to rise for ~1 hour or until doubled in size. (I usually heat a cup of water in the microwave for about 1 min, then place my dough inside beside the water and close the door).
  • After 1 hour or when the dough has doubled, punch it down, remove it and set it on a greased surface. (I use a piece of greased parchment paper).
  • Break or cut the dough into 6 relatively even pieces. Roll and pinch each piece to form a ball shape. Set the finished balls of dough in a greased baking dish (roll to coat them in oil) spaced a little ways apart. Cover with saran wrap or a dish towel and again set aside somewhere warm to rise for another 45min - 1 hour.
  • Near the end of the rising time, pre-heat the oven to 325*F. Once the rolls are done rising, uncover them and bake them on the top rack of your oven (if your oven bakes from the bottom up or on a lower rack if your oven tends to bake more quickly from the top down). Bake them for ~22min or until lightly golden brown on top.
  • Brush the finished rolls with a bit of melted butter. Let them cool slightly then serve with butter or whatever topping you'd prefer. Enjoy the best keto dinner rolls!

  • Mouthwatering Motivation Keto Bread & Pastry Flour - A keto flour I developed to be used in place of white flour in most keto bread and pastry items. It gives baked goods the taste and texture most similar to that of white flour. It also keeps keto baking simple. Just one flour for every recipe!
  • Dry Active Yeast - Make sure your yeast is fresh. If it does't bubble or froth up a bit in the warm milk, it may be expired. I store mine in the freezer to keep it fresh for much longer. 
  • Powdered Monkfruit Sweetener - This is my favourite keto sweetener, but any sweetener will work in this recipe.

Tips For Making The Best Keto Dinner Rolls

  • Make sure to use almond milk around 110*F for your yeast o activate best. This is typically quite warm but not too hot that you couldn't put your finger in the water comfortably.
  • This keto dinner roll dough doesn't need a lot of kneading so if you are using a stand mixer for the recipe, use a low setting and be careful not to over-knead the dough. It should feel elastic and spring back when you lightly press a finger into it once it's done being kneaded. 
  • I like to use salted butter for the melted butter portion of this recipe. If using unsalted butter, these can be really tasty with a tiny sprinkle of flaky sea salt on top after you've brushed them with butter.

How To Store The Best Keto Dinner Rolls 

  • Store these dinner rolls in a ziplock bag at room temperature for up to 3 days OR freeze and thaw as desired. You can microwave them to re-heat them or just let them thaw on the counter.
