
This Keto Cheesecake in a mug may be one of the easiest keto recipes I've shared!
All it takes is 4-5 simple ingredients, a mug and a microwave or oven.
Simply mix all the keto cheesecake ingredients in a small ramekin or microwave safe mug and microwave for ~1 minute.
That's it!!

Let it cool in the fridge or serve it warm, whichever your preference.
Turn it out onto a plate and top it with homemade keto strawberry sauce or no sugar added strawberry/raspberry jam.
You could also top it with fresh fruit and sugar free whipped cream if you like! Strawberries, blueberries, raspberries and/or blackberries all go well.
Either way, this keto 1 minute microwave cheesecake is delicious.

Tips For Making Keto Cheesecake In a Mug
- Microwave times may vary. Mine heats foods quite quickly, if yours tends to take longer, try 1min and 15s seconds or just enough time to see that your cake has fully cooked in the very centre and is no longer liquid.
- This cheesecake is great with other toppings and extracts! Try adding a bit of almond extract, peppermint extract or coconut extract.
- You could also add mix-ins such as lemon juice, orange juice, chocolate chips, strawberry pieces, shredded coconut, etc.
- If you want a more traditional cheesecake, you can bake this at 350*F for 18-20 minutes.

Keto Cheesecake In a Mug
Serves: 1
Ingredients:
- 3 1/2 tbsp cream cheese, softened, 52g
- 1/2 tbsp sour cream, 7g
- 2 tbsp powdered monkfruit sweetener, 20g
- 1 egg, room temperature
- 1/4 tsp vanilla extract
Directions:
- In a ramekin, mug or small microwavable bowl, add the cream cheese, sour cream and powdered monkfruit sweetener. Whisk together.
- Add the egg and vanilla extract and whisk once more.
- Microwave the mixture for ~1 min – 1 min 15s or until the centre is no longer liquid and the cheesecake gently pulls away from the side of the ramekin.
- Place the cheesecake in the fridge to cool or eat warm.
- Serve with fresh fruit, homemade sugar free strawberry sauce or no sugar added jam. Enjoy your keto 1 minute microwave cheesecake!

I was looking for a sweet treat that wasn’t a mug cake and I came across your recipe. I just happened to have everything on hand except the sour cream, but I just replaced it with cream. It was delicious. I had to cook it longer the then the recipe time then ended up overcooking it slightly, but this is a recipe I will make often so I imagine I will have the time perfected before long. I did add a drizzle of no sugar white chocolate glaze and raspberry sauce. I was really surprised how good it came out for as simple the recipe was. Another winner. Thanks for sharing.
