Keto Tuna Melts With Puff Pastry may just become my new lunch staple! I love these things. I’ve been preparing the keto pastry ahead of time so I can just whip these together whenever I have a craving..or I prepare them a day or two in advance and just re-heat them in the oven until crisp again.
Soft Keto Buns…I’m not going to lie, when I was trying to decide what to call these, I almost called them English muffins! They reallllly remind me of them if you cut these and half and toast them with some butter and jam (my favourite way to eat them). BUT these also work great as hamburger buns if you make 5 instead of 6 buns and cook them a tad longer. So I had to stick with calling these Soft Keto Buns. As they are soft, and they do look like buns!
Keto Goat Cheese Tartlets…aka little bites of heaven.
These are DELICIOUS. I’m not just saying this. I ate 3 immediately after baking them and each time I kept saying “WOW”. Friends and family agreed. The pastry for these is perfect. You wouldn’t even know it’s low carb.
The pastry is flaky, buttery and has a fantastic crunch. When I first came up with this low carb flour combination I think I cheered out loud. I baked it on it’s own to test it and when I tasted it I was in SO EXCITED. Like I’m talking, happy dancing around my kitchen, excited.
