I literally ran to my computer after coming up with this recipe. I can't believe how delicious this was! I felt like I was indulging in some super high-fat dessert. If you are trying to eat healthy and can't stand that frustrating smell of delicious cinnabuns being made every time you walk by at the mall..then have no fear this little guy is here to save you. It is honestly so good I can't even begin to describe. I was amazed that my random throw together of ingredients created something so beautiful. (It doesn't happen often). Anyways this mini cinnabun is an amazing dessert for any night or a snack when you are craving something sweet. It contains an outstanding 16g protein, 164 calories(with icing included!). I have no clue how this works but I don't care. Just try it. That's all I have to say!

Mini Protein Cinnabun with frosting:
Ingredients:
1 tbsp oat flour
1 tbsp cinnabun protein powder(or vanilla, I used trutein cinnabun, highly recommend!)
a little over 1/4 tsp baking powder
dash of salt
1/2 tsp cinnamon
1 tbsp + 1 tsp egg whites
1 tbsp unsweetened vanilla almond milk (could sub another milk)
2 tbsp plain 0% greek yogurt
1 tsp coconut oil melted
1-2 drops stevia sweetener or another sweetener to taste (the batter should be pretty sweet)

Optional but highly recommended add-ins:
1 large crushed pecan+1 more for topping
1/2-1 tbsp raisins

Icing:
2 tbsp plain greek yogurt
1/2 tbsp low-fat cream cheese
2 drops stevia sweetener or another sweetener to taste
1/4 tsp low-sugar maple syrup or real maple syrup
1/4 tsp vanilla extract
Combine ingredients until smooth.
*Note you will most likely have left over icing, feel free to save it for another cinnabun or just lick the bowl like I did!

Directions: Spray a ramekin or mug with cooking oil then add in all dry ingredients. Stir in wet ingredients until batter is smooth. Pop in the microwave for about 1:30-1:50mins. When done the cinnabun should be quite dense and not very tall(this is what makes it so tasty..). It may seem a little undercooked but don't worry it's done! Use a knife to cut around the sides and turn the cinnabun upside down onto a plate. Spread icing on top and add a pecan or raisins as optional garnish. Dig in and enjoy without guilt! 🙂
