
Why did the banana go out with the prune? Because he couldn’t find a date. Get it?? Okay I admit that was awful…, but this Banana Bread Oatmeal sure isn't! I couldn't wait to dig into this after taking the pictures. I don't know anyone who actually dislikes banana bread. If you do then..you should just leave immediately (just kidding! maybe..) Banana bread is like a staple in my diet and I can only go so long without it. So after making some Healthy Banana Bread for dessert, I decided, why can't I make it a part of my breakfast too? And thus, the Banana Bread Oatmeal was created.
Ingredients:
For the mix:
-1/3 cup quick oats
-2/3 cup unsweetened vanilla almond milk
-1/4 tsp vanilla extract
-1/4-1/2 tsp cinnamon(add more/less depending on preference!)
-dash of salt
-2-3 drops stevia sweetener or 1/4-1/2 tsp honey. (I used a little of both)
-1/3 of a mashed ripe banana
For the toppings:
-1/3 of a banana chopped
-1 piece of Healthy 100 Calorie Banana Bread chopped into chunks
-1 tsp or a small sprinkle of mini chocolate chips
-1 tsp chopped pecans
-extra cinnamon and optional sprinkle of granular stevia
Directions: Combine oats and almond milk and microwave on high for 2:30 mins. Then stir in your sweetener, extracts, cinnamon, salt & mashed banana. Add your toppings and serve hot! Enjoy 🙂
