
This Keto 1 Minute Microwave Bread is about to make your low carb life a whole lot easier!
It really does taste like bread. There's no almond flour involved and very little coconut flour so you get a much more realistic bread texture as compared to many other keto bread recipes.

Now this keto microwave bread recipe does contain vital wheat gluten. If you haven't heard of it, it is a very low carb flour created by extracting the protein from wheat (aka the gluten protein).
On it's own gluten flour is mainly protein with a small amount of carbohydrates attached (about the same as a cup of almond flour) so it's very much keto friendly.
The only exception is if you are celiac or gluten intolerant. That is when you'll want to avoid gluten flour and instead try out another keto microwave bread recipe such as this one: Easy Keto Bread Recipe (2 Minutes)
This recipe also contains lupin flour. Lupin flour is amazing for “softening” keto baked goods and providing a texture you just cannot achieve with any other flour. Ingredients In Keto Microwave Bread
- Vital Wheat Gluten – Gives the bread elasticity and stretch so when we knead the dough, it becomes a little chewier and has structure once baked, just like traditional bread recipes.
- Oat Fiber – Adds bulk to the recipe without adding hardly any additional carbs. It's very high in fiber as well!
- Lupin Flour – Super cool newer keto ingredient on the market these days. Like oat fiber, this flour is very low in carbs and high in fiber but it also gives the amazing effect of “softening” low carb bread products. With this ingredient, you get a softer, fluffier bread than you would with any other low carb flour. - Coconut Flour – Used in small amounts, this is great for thickening recipes without adding any unwanted flavour or texture! Coconut flour keeps our bread lighter as opposed to almond flour.
- Xanthan Gum – Similar to vital wheat gluten, this helps to thicken our bread, add elasticity and a bit of chewiness to it.
- Baking Powder – Used to create rise in our bread since we are not using yeast! We use quite a bit as keto baked goods require additional leavening as opposed to their traditional counterparts.
- Allulose – Used to sweeten the bread ever so slightly! Sweetening keto breads is important because without it, the breads tend to taste bitter due to the different flours used and not the same as what we might be used to.
- Salt – Added for flavour of course! You can use any additional spices you'd like as well. Garlic and parmesan seasoning + some italian spices is great if you also want to brush this bread with garlic butter after baking and melt some cheese on it for a keto garlic bread!
- Olive Oil – Necessary for the bread to stay fresh/soft longer at room temperature. You can add a touch more in place of a little water if you'd like your bread to keep longer. You can also use coconut oil here if you don't mind the flavour!
- Water – The main ingredient to get the dough to come together! Try adding 1 tbsp low carb milk or heavy cream in place of a tablespoon of water for an even softer bread dough.

- Whisk
- Parchment Paper (to knead the dough on – optional, can also use a clean surface)
- Rolling Pin

How To Store Easy Keto Microwave Bread
- Store this bread in a ziplock at room temperature for up to 1 day (longer if using more oil – see tips) OR freeze inside 2 ziplocks to prevent freezer burn and thaw when you'd like to eat it next!
Tips For Making Keto 1 Minute Microwave Bread
- This bread calls for allulose as a sweetener to offset the bitter taste of keto flours. Allulose is used because it provides a light sweetness. If using another sweetener that measures like sugar, be sure to use HALF as much sweetener as called for.
- Want to soften this bread even more? Use 1 tbsp heavy cream in place of 1 tbsp of water (you might need a touch more water to bring your dough together so just adjust as needed).
- Try adding spices to this bread if you wish! It's really delicious with garlic, parmesan and italian spices. Spread garlic butter on it after baking and toast it in the oven for a couple minutes with some additional mozzarella and parmesan cheese sprinkle on top!
- This can also be a sweet bread if you increase the sweetener and use 1 tbsp heavy cream in place of water (add additional water if needed) along with some cinnamon. This works great for later making french toast with!
- When microwaving your bread, 1 minute is usually ideal for most microwaves but if yours tends to take longer than average to heat things then try 1 minute 20s or 1 min 30s. Just note that this bread will firm up more as it cools so be careful not to over-cook it.
- For bread that stays fresh longer, try using a little more olive oil. Olive oil helps to preserve the bread's softness.
- You can make this bread on a plate or in a rubbermaid container or any other sort of rectangular or square container. Just know, how thin or thick you roll the dough out will adjust the microwave time slightly.

Keto 1 Minute Microwave Bread
Serves: 2 “slices” of bread
Ingredients:

- 2 tsp allulose, 8g
- 1 tsp baking powder
- 1/16 tsp xanthan gum (optional)
- pinch of salt
- 1/4 cup water, 60g
- 2 tsp olive oil, 10g (coconut oil or melted butter can also work)
Directions:
- Add the vital wheat gluten, lupin flour, oat fiber, coconut flour, allulose, baking powder, xanthan gum and salt to a small bowl. Whisk to combine.
- Next, to the same bowl, add the water and oil.
- Mix using a spoon until everything begins to come together. Then use your hands to continue to form the dough.
- Knead the dough for about 30s to 1 min on a clean lightly greased surface or parchment paper.
- Then, using two pieces of lightly greased parchment paper, place your dough in-between and roll it out to your desired shape (roll it into a large rectangle if you want two “slices” of bread). If your dough is springing back, it means you may need to give the gluten a rest. Roll it out as much as you can, leave it alone for a minute or two then continue rolling until you reach your desired shape.
- Place the dough on a lightly greased plate or in greased microwave-safe rubbermaid container. Microwave for 1min to 1 min 30s depending on your microwave. Your bread will firm up as it cools so be careful not to over-bake it!
- Let it sit for a minute or so just to cool slightly, then remove it from the plate or container.
- Slice in half for two pieces of “bread”. And serve with whichever toppings you'd like OR immediately place in a ziplock for later. Enjoy your Keto 1 Minute Microwave Bread!

Thank you for this terrific recipe! I found it and you after searching “microwave bread, vital wheat gluten”. I agree, the combination of lupin flour, oat fiber and VWG is a great base for keto breads, noodles etc. Bonus: I was hoping for something without nuts, eggs and cheese, the fallback for so many keto-fied recipes. To fit my remaining macros, I reduced the VWG, and also the baking powder, and water, and loved the result. Understandably my dough was not as springy as yours appears to be, having less gluten, but still made a satisfying slice. Great work!

I made this today and really like it. I inadvertently forgot the oat fiber so it was a little dense, but still good. I have no allulose because it's not allowed in Canada yet, so I subbed 1 tsp. inulin and a half teaspoon of granulated erythritol-monkfruit sweetener. To roll, I used a heavy plastic bag that is open on two sides, and is washable and re-useable.
My only suggestion is that you give an example of the size of your container and the power of your microwave in Watts, to help me estimate how long this will take. I tried a minutes at 70% because I've had problems in the past with microwave breads, but needed to add a lot more time.
