Jumbo Chocolate Chip Cinnamon Protein Bars

Good morning all! Tomorrow we leave for my amazing cottage so I wanted to bake a healthy breakfast ahead of time…and what's better than the combination of cinnamon, chocolate and  peanuts? Uh..Nothing! So what I did was take my original cinnamon swirl protein bars made with the amazing Trutein cinnabun protein powder, and just topped them with 30g (2 tbsp) of mini chocolate chips, baked them in a 9×9 inch pan and cut them into 9 huge squares…I may have also added a couple extra peanuts in the bars ;)….

  1. I made these bars today using Cellucor cinnamon roll protein powder and they are delicious! I’m wondering what kind of stevia did you use, was it regular granules or baking stevia? I added only 2 T total of granule Truvia (no extra for sprinkling with the cinnamon and no drops) because the batter seemed really sweet. After baking they were slightly less sweet but still perfect for me…maybe my protein powder is more sweet? Also I didn’t have peanuts so I just dropped a couple tablespoons of melted chunky natural peanut butter on top and swirled it in.YUM! Thanks for the recipe!

    1. Hey Carlyn! Sorry for the late response, this is an old recipe of mine but I remember I used to use the stevia drops in the batter but granular sweetener for sprinkling so that could explain the sweetness difference! I LOVE the idea of just swirling peanut butter on top..I found apple chunks were also a perfect addition to the batter! Anyways, glad you enjoyed the recipe and thanks for commenting :).
