I'm so excited about these Keto Peanut Butter and Jelly Cookies!

I've been meaning to make these for AGES. I'm not sure why it took me so long to take this from an idea to reality.

I think I just wanted to make sure these cookies were exactly what I was envisioning.

I am happy to say that these definitely are!

They have enough peanut flavour and the jelly is just the right amount! They are soft and not super crumbly like other peanut butter cookies I've tried.

The best part is that I also created an awesome PB frosting to go with them which just adds to the delicious peanut flavour!

But feel free to also just slather them in extra peanut butter..I can say from personal experience that that is easier and also just as delicious!

Keto PB & J Cookie Ingredients:

Almond Flour– I use the Kirkland Costco brand of almond flour (I buy it in bulk on Amazon or at Costco itself occasionally) for this recipe. As I’ve noted in many of my past recipes, the brand of almond can affect the final outcome of the recipe because absorbency can vary depending on how the flour has been processed.

Powdered Monkfruit Erythritol Sweetener  –   I use the SoNourished brand for both granular and powdered sweetener and love it! The powdered is the best option for no-bake goods and desserts where you want a very smooth final product. I also used the powdered in this recipe because it works great in baked goods but ALSO creates perfect glaze every time!

Xanthan gum – This is used to create a batter more similar to that of white flour. It helps give the donuts a “doughier” texture.

Blackstrap Molasses – This is optional, it adds a brown sugar flavour to recipes very minimal carbs! I only use 1 tsp and it adds a ton of flavour. I highly recommend it but if you’d like to leave it out you can..OR you can alternatively replace half the sweetener in this recipe with Sukrin Brown Sugar Sweetener.

Keto Peanut Butter and Jelly Cookie Tips

–Make sure all of your ingredients like butter, peanut butter and egg are room temperature for best results

–These cookies will look under-done…don't try to keep baking them! They will set once fully cooled

–Feel free to get creative and use different jams for this recipe!

–You can skip the frosting entirely for this recipe and replace it with a regular peanut butter drizzle on top! (note that the frosting is already included in the nutritional info below)

Can I substitute almond flour for coconut flour?

I explain this in some of my other recipes, but ultimately almond flour is much less absorbent than coconut flour so if you want to try and substitute almond flour you will likely need more than double the amount of coconut flour called for.

For this recipe, originally it calls for 1/2 cup coconut flour so you would need 1 cup of almond flour to replace it (if not a bit more).

If it were me, I would replace the coconut flour with 1 cup almond flour to START and see how that goes for you. Make a test cookie and let it cool FULLY after baking so see if you are happy with the texture of the cookie!  (Remember these cookies may look under-done at first but they set after cooling) If you do not like the test cookies' texture, just add slightly more almond flour to the rest of your batter.

What if I Don't Have Xanthan Gum?

If you don't have Xanthan gum you can definitely still bake these cookies. It just helps with providing a nicer overall texture to the cookies.

For substitutions you can try 1 tsp cornstarch or 1 tsp flax. These aren't the exact same thing but some of my readers have had success with using these substitutes!

You can also just leave it out entirely if you'd like.

Can I Use a Granular Sweetener or Another Sweetener Instead of The Powdered Monkfruit/Erythritol Blend?

You can definitely use whatever sweetener you have on hand. Just make sure to check the taste of the batter before baking, as some sweeteners can be sweeter than others. (For example: Truvia is 3x sweetener than sugar, so when using it, be sure to start with LESS than the amount called for and see how you like it)

I personally use powdered sweetener because it blends very well into any recipe. I have used swerve/pure erythritol in the past but a monkfruit/erythritol blend I found is amazing for cutting erythritol's strange aftertaste/cooling effect it can sometimes have!

Peanut Butter Icing:

Directions:

1. Pre-heat your oven to 350*F.

2. Combine your dry ingredients in a bowl (all except powdered sweetener).

3. In another bowl, beat together the butter, peanut butter, egg, vanilla and molasses.

4. Add your sweetener and slowly beat this into the wet mixture as well until smooth.

5. Pour your wet ingredients into the dry ingredients and mix until a thick batter forms.

6. Roll batter into 12 large balls and set them evenly spaced apart on 2 greased sheets.

7. Press down each ball to flatten (see photos) and then make a small round indentation in the centre for the jam.

8. Place 1 tsp of jam in the centre of each cookie then set them in the oven to bake for 8-10min or until bottoms are lightly browned. (These cookies will not seem done when you first remove them and will be fragile at first but they will set and harden, don't over-bake them!)

9. While the cookies are baking, you can prepare your frosting by combining the above 5 peanut butter icing ingredients in a bowl and beating or using a fork to blend until smooth.

10. Place this mixture in a small plastic ziplock and cut off the corner.

11. Once the cookies have had time to cool, move them to a wire rack and drizzle/pipe the mixture over the cookies. (I put another tray underneath to catch the excess frosting).

12. Place the cookies in the fridge or freezer for a bit if you'd like the icing to thicken up a bit, then serve…OR just serve warm and messy! Enjoy your Keto Peanut Butter and Jelly Cookies! Store them in an airtight container for a quick snack or freeze them flat on a tray before placing them in a ziplock and storing them frozen that way!
