KETO CHOCOLATE BANANA MUFFINS
I made these keto chocolate banana muffins in place of my childhood favourite “Quaker Double Chocolate Muffins”. These were the kind of muffins we only got to eat on special occasions like sleepovers and birthdays. My friends and I all LOVED waking up to these warm, fudgey, rich chocolate muffins. It was tradition.
But the best part was that my mom always added extra chocolate-chips and mashed banana to the original recipe.
This made them taste 1000x better in our opinion.
Thus, I wanted to make a keto muffin that was as similar as I possibly could. Continue reading “Keto Chocolate Banana Muffins”
KETO ALMOND JOY COOKIES
Were you a fan of Almond Joy bars as a kid? I mean with that delicious chocolate coating and the chewy sweet coconut centre…
Well, I sure was. I’ve always been a fan of anything almond and coconut.. actually one of my favourite low-carb protein bars is the Almond Coconut Built Bar (see my previous post for a full review of Built Bars!)
I’ve always loved almond croissants, coconut macaroons, coconut milk, almond milk… you name it.
That’s why when I considered the fact that ALMOND and COCONUT FLOUR are two of the most popular ingredients in keto baking… WHY HADN’T I THOUGHT OF AN ALMOND JOY COOKIE YET?
That’s where the idea for these babies came from. Continue reading “Keto Almond Joy Cookies”
These chocolate macadamia nut cookies are everything you’ve ever dreamed about.
Have you had Subway cookies? ..or bakery style cookies? Because that’s basically these but keto-fied.
They are soft and chewy in the middle but also slightly crisp just at the very edges.
Did I mention they are also huge and only 3.5 NET carbs for one large cookie?
Perfection. Continue reading “Keto Chocolate Macadamia Nut Cookies”

KETO WHITE CHOCOLATE COCONUT CLUSTERS
White chocolate is one thing I find myself and many other people missing on keto.
Sure chocolate itself is great and their are many keto dessert options based around it, sometimes its nice to have something different! So lately I’ve focused a lot of my recipes around this “white chocolate” concept. Continue reading “Keto No-Bake “White Chocolate” Coconut Clusters”
Well, here I am again with yet another pumpkin recipe…and yet another truffle recipe. I honestly love the ease of not having to bake dessert. No-bake is the WAY TO GO when you are as lazy as I am.
These little things are tasty, not difficult to put together and are a life-savour when it comes to drowning in Halloween treats full of carbs and sugar and other scary ingredients…(see what I did there? 😉 )
They are not overly sweet and are the perfect balance between soft and crunchy with the delicious cheesecake style filling and chocolate-coconut coating on the outside!
I hope you enjoy them as much as we did! Continue reading “Keto No-Bake Pumpkin Cheesecake Truffles”
