Those cookies were a HUGE hit not only on my blog with countless re-pins and people tagging me in their instagram posts after making them..My friends and family also loved them and they inspired me to sell some of my cookies. So that recipe I hold near and dear to my heart.
Then after much experimentation.. this Keto Chocolate Chunk Cookies recipe came into the picture. Straight off the batt, these knock the originals out of the park. These are so close to “real” chocolate chunk cookies, you’d hardly believe they were keto.
They are chewy and crunchy and soft in the middle with gooey melty chocolate pieces throughout…

Keto Goat Cheese Tartlets…aka little bites of heaven.
These are DELICIOUS. I’m not just saying this. I ate 3 immediately after baking them and each time I kept saying “WOW”. Friends and family agreed. The pastry for these is perfect. You wouldn’t even know it’s low carb.
The pastry is flaky, buttery and has a fantastic crunch. When I first came up with this low carb flour combination I think I cheered out loud. I baked it on it’s own to test it and when I tasted it I was in SO EXCITED. Like I’m talking, happy dancing around my kitchen, excited.

A cookie you can eat for breakfast because there’s no sugar added, it’s grain free and packed with healthy fats and fibre BUT STILL tastes delicious…DEFINITELY COUNT ME IN.
I am all about the simple recipes lately and this one is now exception. Mix your ingredients, microwave and done. Breakfast or.. a snack if you are a normal person who doesn’t eat cookies for breakfast like me.
I feel like I never learn my lesson with Keto Cinnamon Rolls.
Seriously. The amount of times I have attempted different versions on this blog is actually appalling. Almond flour keto cinnamon rolls, coconut flour keto cinnamon rolls, protein keto cinnamon rolls…and now “Soft and Gooey Keto Cinnamon Rolls“.
But, with that said, I think the experimentation can be good. Every time I re-make them slightly different, I feel as if we progress to another cinnamon roll level.
The only issue is I can rarely get a good photo of cinnamon rolls.
I’m not sure if this is just my lack of photography skills in this area but does anyone else find cinnamon rolls to always look like a big gooey blob in every photo? LOL.
I can tell you that I took 124 photos just to get the few semi-decent keto cinnamon roll photos you see here.

These Keto Oreo Cookies are something I will remember forever.
This recipe is one that came to me literally in the middle of the night. After watching a cooking competition show where a famous chef talked about making the impossible possible..and then showed a bunch of his crazy dessert inventions.. It got me thinking.. Why HAVEN’T I tried recipes that really push me out of my comfort zone?
There’s so many recipes I’ve want to to try and make but always deemed them too hard or impossible to make keto, at least to the standard I’d want them to come out.
So that’s when I thought, let’s just go for it and see what happens. WHY NOT. The worst that could happen is that I trash the recipe and bake something else for today’s blog post.
But man.. I was absolutely determined to get these Keto Oreos right. And that I did.
