
Delicious, easy-to-make keto granola bars that you can prepare ahead of time for an easy on-the-go snack!
These are so good! They are soft, chewy, crunchy..everything you could want in a low carb snack bar.
Keto Granola Bar Ingredients:
- Almond Flour – I use the Kirkland Costco brand of almond flour (I buy it in bulk on Amazon or at Costco itself occasionally) for this recipe. As I’ve noted in many of my past recipes, the brand of almond and coconut flour can affect the final outcome of the recipe because absorbency can vary depending on how the flour has been processed.
- Splenda & Truvia – Since I’ve re-made this recipe many times, I’ve switched over to using a monkfruit/erythritol blend instead of splenda and truvia. The reason being.. It’s much more keto-friendly in terms of it’s effect on insulin levels and it probably has the closest taste to real sugar! I highly recommend trying it out. I use this blend from SoNourished.
- Vitafiber Syrup – I now use the Choc Zero syrup in place of this! You can order it on amazon. It's great for any no-bake keto or low carb recipes!

Grab and Go Keto Granola Bars
Serves: 4-8
Ingredients:
- 1/4 cup almond Flour, 30g
- 1/4 cup unsweetened coconut flakes, 15g
- 2 tbsp chia seeds, 30g
- 2 tbsp ground flax, 13g
- 1/4 cup pecans chopped, 30g
- 1/4 cup vitafiber syrup, aka IMO syrup, 60g
- 1 tbsp butter softened, 15g
- 1 tsp vanilla extract
- 2 tbsp Splenda, or another sweetener that measures like sugar
- 1 tbsp stevia sweetened chocolate chips, 15g, I use the Krisda Brand
Directions:
- Preheat oven to 300*F
- In a medium bowl, combine all dry ingredients.
- Mix in the butter, syrup and vanilla until a sticky mixture is formed.
- Line a cookie sheet with parchment and spread the mixture out, pressing it into a thin rectangular shape. (You can spray your fingers with Pam if it is sticking)
- Bake for 11-15min or until the edges are lightly browned and the centre is cooked through.
- Remove from oven and cool completely before slicing into 4 or 8 bars. (Put it in the freezer for faster cooling, the bars will also harden-up as time goes on!)
Eat immediately or store in an air-tight container once completely cooled. Enjoy your Keto Granola Bars!

These turned out great!! I did a few things different though, I used allulose honey flavor for the syrup and just before I baked them I sprinkled some sea salt on top. They are amazing!

Is there anyway to make these without the Vitafiber syrup and still be Keto? I can't find the syrup for under $20 online. Thanks

Pardon my ignorance, but some of the abbreviations I am not familiar. Per Bar: 16F/4C(Net)/5P & 21g fibre
I understand 4 net carbs per serving & 21g fibre but do not know what 16F is nor 5P.

Would love to try this recipe though wondering about an IMO replacement? While vitafiber is lovely in baked goods, please note that IMOs are well known to spike blood sugar. For some as much or even more than eating regular table sugar!!! It would be helpful for true diabetics to know this :)
