
Avoiding sweets is a challenge to most. We eat right so we can look and feel good about ourselves. But once in a while..we just need a treat! So what I propose, is that we eat healthy while continuing to eat treats. To start you off, try my awesome Banana Chocolate-Chip Protein Souffle Muffins. They taste like a decadent dessert and give you that satisfaction you need while being 100% good for you! Can it get any better?
Serves 6:
Ingredients:
1 and 1/2 medium bananas mashed
1/2 cup egg whites
1 egg
1/2 cup plain 0% greek yogurt (I used plain Chobani yogurt)
1/2 cup oat flour(or about 3/4 cup oats ground in food processor)
2 scoops Vanilla protein powder (I used French Vanilla Designer Whey)
8-9 drops liquid stevia or 1/4 cup granular sweetener (could also use honey to taste)
1 tsp Baking powder
1 tsp Baking soda
1/4 tsp vanilla extract
1/2 tsp Cinnamon
2 tbsp mini chocolate chips divided
Directions: Preheat oven to 350* Spray a 6 muffin baking pan with cooking oil(DO NOT USE MUFFIN LINERS).
Whisk together all of the above ingredients in a medium bowl, adding half of the chocolate chips last. Using a ladle, pour batter to the rim of the 6 muffin tins( you may have a little extra batter, feel free to make 1 small mini muffin like I did! but note it will cook much faster). Place the muffins in the oven and set a timer for 10 min. After 10 minutes remove quickly and top with the remaining mini chocolate chips. Set the timer for another 8 min or so. They are done when they slightly brown on top and a toothpick comes out clean. (Mine took a total of about 17 min.). Be careful not to overcook! Once removed let them cool slightly before removing from the pan. Enjoy!
