
Goodmorning everyone! Today I had another great breakfast with oatmeal! I'm actually just finishing this filling meal as I post this! This variation of oatmeal is decadent, creamy, luscious..okay you get the idea. If you love raspberries, lemon or cheesecake then you should definitely make this recipe! I can't tell you how good it is.
Ingredients:
1/3 cup dry quick oats
scant 2/3 cup unsweetened almond milk
3 drops stevia sweetener (or you could sub another sweetener of choice)
1/4 tsp vanilla extract
1/8-1/4 tsp lemon zest
1/8-1/4 tsp lemon juice (depending on how “lemony” you want it to be)
1 heaping tbsp low-fat cream cheese
1/4 cup frozen raspberries Heating in the microwave with 1-2 drops stevia or another sweetener of choice!1
optional: sprinkle of coloured coconut (just for fun and looks!)
Directions: Combine oats and almond milk and in a medium bowl and microwave on high for 2-2:30 minutes. (If still runny, cook them a little longer! But they will also thicken as they sit out). After they've finished cooking, add you sweetener, vanilla, lemon zest and lemon juice. Then stir in your cream cheese until smooth and top with warm raspberry sauce(feel free to kind of swirl it into the oatmeal!). Then sprinkle optional, additional lemon zest & coconut on top of the oatmeal. Enjoy!
