I recently have fallen in love with avocados, they are so rich and creamy. It’s hard to believe I didn’t like them the first time I tried one. I guess I just didn’t know how to eat it. But in avocado banana pudding I think anyone would find them delicious. I made this because I already love bananas and I thought why not combine the two? This recipe is so simple and can be prepared in less than 5 minutes for a quick healthy breakfast.
-1/2 a ripe frozen banana
-1/2 a ripe avocado (preferably chilled in the fridge)
-1/8 tsp vanilla extract
-1/2 tsp honey or to taste (could sub stevia drops)
-dash of salt
-1/2 cup unsweetened regular coconut milk(not full fat) (could sub any other milk you prefer, I used the brand “coconut dream”)
Directions: Combine the avocado/banana/milk in a blender then add vanilla and salt, mix again, now add your honey until it is sweet enough to your liking. Pour in a bowl and enjoy!
