High Protein Spicy Tuna Egg Salad

This doesn’t sound like much..but trust me it’s good, creamy & rich with half the fat and double the protein of regular egg salad. This makes a delicious, filling low-carb meal on it’s own or it would go great on a sandwich! You can increase or decrease the spice based on personal preference.

 

Serves 1-2

Ingredients:

    • 1 whole egg boiled chopped
  • 1 can of tuna (about 140g) shredded
  • 1 cup egg whites seasoned with black pepper and a little salt cooked like a pancake (cooked in a pan sprayed with pam over medium-low heat, flip half way through, don’t brown the egg too much, just enough!) slice into chunks and place in the fridge to chill.
  • 70g ripe avocado chopped into chunks(about 1/3 of a large avocado)
  • 2 tbsp 2% cottage cheese
  • 2 tbsp 0% plain greek yogurt
  • 1 whole Green Onion finely chopped
  • Sriracha Sauce to taste
  • salt/pepper to taste

Directions: 

Sauce:

In a food processor, combine 1/2 the avocado chunks, cottage cheese, greek yogurt, a little salt/pepper and some sriracha sauce to taste and mix until smooth. (If you are lazy like me, you can just mash everything together decently well with a fork, haha).

Putting it together:

In a medium bowl, combine your egg whites & egg. Before adding in the tuna, stir it into the sauce you created and then add the tuna/sauce mixture to the eggs along with the leftover avocado chunks. Mix well and sprinkle with green onion. Give it one last toss and top with additional sriracha sauce as desired. Enjoy!

Honestly I am not sure why I didn’t post this recipe sooner! I eat this almost weekly and it’s one of my favourite simple meals! It’s so filling and delicious, I don’t feel like I am missing out at all when I eat this awesome dinner. It’s better than TACOS. I’d never thought I would say that but yes I prefer this salad to regular tacos! It’s also high protein and lower in carbs. So instead I put together this beautiful salad with what we had in the fridge. It tasted awesome! I love how something so simple can taste so delicious. Vegetarian Open-Faced Avocado Chickpea Sandwich

Ahh..Summer, the perfect time for swimming, camp fires, long walks and delicious food. Looking for the perfect summer lunch? Try my Open-Faced Avocado Chickpea Sandwich. I love avocado and chickpeas so I thought why not combine them in a beautiful sandwich rather than my typical salad. It turned out super delicious, packed with protein and the perfect meal for vegetarians!

Ingredients:
Salad:

  • 1 piece of thick cut whole wheat bread or crustini (I used vitality country harvest, 90cals/slice)
  • 1/5 of a large avocado
  • 1/4 cup of rinsed and drained chickpeas
  • 1/2 tbsp  green onion finely chopped
  • 1/2 tbsp finely chopped red onion
  • 3-4 chopped cherry tomatoes or 1 slice of tomato chopped
  • juice from 1 small wedge of lime (to taste!)
  • salt/pepper(to taste)

Spinach Layer

  • a few leaves of fresh spinach

Egg Layer:

  • 1 sliced hardboiled egg
  • 1/4 tsp paprika
  • 1/8 tsp cayenne pepper
  • 1/4 tsp chili pepper flakes
  • salt/pepper (to taste)

Directions: In a small bowl, mash together the avocado and chickpeas.(optional-I left out a few chickpeas to add back in later for extra texture). Once combined add in the other salad ingredients and finish-off with salt/pepper & lime until it’s seasoned to your liking. Next either toast your bread or leave it as is. Spread the salad mixture on top of the bread then place spinach leaves on top and your egg layer on top of that sprinkled with spices & additional salt/pepper. Now grab a fork and knife or use your hands and dig in! Enjoy!

Nutrition Facts(using vitality bread): 29o calories, 35g carbs, 12g fat, 16g protein, 9g fibre

P.S, My perfect side to this sandwich is a serving of large frozen shrimp thawed and deveined with cocktail sauce…amazing!

Spicy Sweet Potato Fries & My Current Workout Split/Eating Habits

Hey guys! Sorry for the lack of posts lately! I have been slacking off a bit with my blog due to the fact that I am trying to get my own eating habits and workouts in check. I think I’ve finally got it figured out! So..I have been trying to gain weight for a while but I have a hard time putting it on(high metabolism!). So lately I have started to count calories again for a bit just to make sure I am getting enough each day because it’s very important to me to not under eat! I have also stopped almost any form of cardio. The only cardio I am doing is 20 minutes of steady running on the treadmill (5.0-5.5mph) one day a week. It’s working really well! I love weight training so this works well for me. My current 5 day split + cardio is:

  • Monday – Chest + Back + Abs + TVA(Planks for 1:30, 1 min, 50sec, 30sec with a small rest in-between each)
  • Tuesday – Biceps + Triceps + Shoulders + Calfs
  • Wednesday – Quadriceps + Hamstrings + TVA(Planks for 1:30, 1 min, 50sec, 30sec with a small rest in-between each)
  • Thursday – Chest + Back + Abs + Calfs
  • Friday – OFF
  • Saturday – Biceps + Triceps + Shoulders + TVA(Planks for 1:30, 1 min, 50sec, 30sec with a small rest in-between each)
  • Sunday – 20 min run(Treadmill)
My schedule seems a little weird because I have friday off then I workout saturday but that’s just because Friday always seems to be my busiest night haha. Anyways so my diet has changed, I take in about 1700-1750 calories a day at the moment but I am planning on increasing it as I increase the weight I am lifting. But so far it’s working since in a week I have measured myself multiple times on an empty stomach and I’ve gained about 0.7 pounds. That’s pretty good for a week. I am getting stronger too I have noticed. My new workouts are a lot more demanding and last anywhere from 30min-1 hour. Although I still recommend my past workouts (10-20min) for anyone! They really are great! But I am more focussed on putting on muscle mass at the moment so I am trying to steer away from my old more cardio based workouts for now. So overall I am just trying to eat more, lift more and worry less about every little detail. I feel much happier with where I am at!
P.S: ALL MY WORKOUTS ARE STILL DONE AT HOME. No gym for me 😉

My current favourite salad includes chopped romaine and spinach, lemon dijon chicken, red and green peppers, red and green onion, a large handful of chickpeas, a little crumbled herbed goat cheese and about 4 large crushed pecans topped with a dash of salt and a lot of pepper served with Italian dressing. delicious !

Hey guys! I finally tried adding spinach to my smoothie today! It actually was amazing! Thanks Tara for the awesome idea :). I feel so good knowing I am getting some greens in at breakfast too now. This smoothie ended up being huge! It was almost spilling out of my little blender haha. Shown in the picture isn’t even the whole smoothie! But it kept me more full then usual. Did I mention it tasted super good? Plus..I got a new protein powder that is absolutely amazing. Hands down the best one yet! It actually makes my smoothies taste better! So if you feel that your not getting enough veggies and greens but can’t bring yourself to eat them, look no further, this smoothie has come to the rescue. Take me to the recipe!

I have recently gotten a little bored of eating a romaine lettuce salad everyday for lunch. Not to say that I don’t love my giant salads! But I needed a change. So instead I came up with another salad! Apparently I suck at new ideas..But this salad is completely different and is 100% AH-mazing. So if you aren’t a salad eater, trust me on this one. You’ll like it. Filled with black beans, corn, avocado and more, this high protein lunch will keep you full for hours. Take me to the recipe!

Avocado Shrimp Salad
This salad is such a wonderful light and filling but not stuffing dinner. I loved how it had no mayo so it lets the other flavours really shine! Perfect for a summer picnic :).

Serves 2
Ingredients:
-20-30 large shrimp frozen, thawed under cold running water & chopped (pre-cooked kind, but you could cook/peel/devein your own if you’d like, just let them chill for a bit afterwards.)
-1 ripe avocado cut in chunks
-2 tbsp chopped red onion
-1-2 cups romaine lettuce chopped
-1/2 a large tomato or 1 small, chopped
-1/8 tsp garlic powder
-1/8 tsp onion powder
-1/4-1/2 tsp dried basil
-1/4-1/2 tsp dried oregano
-1/4 tsp red pepper flakes or to taste
-salt/pepper to taste
-1 tbsp chopped pecans
-2 tsp olive oil
-juice of one lime
optional:-chopped cucumber, pinch of coriander

Directions: Combine the olive oil and lime juice in a bowl along with some salt/pepper and the red onion and allow to marinate for about 4-5 minutes. Then throw in the rest of your ingredients and add your spices/pecans & possibly additional salt/pepper. Toss to coat everything with dressing. Chill in the fridge for a few hours or serve immediately! Enjoy! 🙂

A Day Of Clean Eating-Food Journal

Hey guys! I thought I would share with you a full day of what I eat just to give you an example of my healthy “diet”. I don’t follow any plan specifically, some days I am more paleo then others though and I don’t eat a lot of grains but I am trying to incorporate them into my daily eating in small amounts during times when my body needs them like breakfast and after a hard workout for dinner. I don’t believe in eating super small quantities of things when you are very active. I eat A LOT but I need a lot to support my body since my metabolism is so high these days, putting on muscle weight is difficult. Soo anyway, let me know if you have questions about my exercise routines/eating or recipes! Talk to you soon :).

Oats For Breaky Cookies:Cream Whey

Breakfast 7:00am Oatmeal with fresh mixed berries, 1/2 a smashed banana, cinnamon, stevia, vanilla extract, peanut butter & sprinkled pecans and cashews

+ 1/2 Scoop Cookies and Cream protein powder in water.

 

11:00am Lunch: No picture! But it is very similar to all my typical salads with goat cheese, tuna, ham, 1/4 of an avocado and a sprinkle of pecans over assorted veggies and romaine lettuce. This salad is huge and very filling!

Pre-workout snack ham

Pre-Workout Snack:

3:0opm A few carrots/snap peas and 1oz black forest ham with spicy hummus.

4:00pm -Workout (was only about 35ish min, I did biceps/triceps/shoulders today)

Post-Workout Fruit Cottage Cheese

5:00pm Post-Workout Snack: around 1/2 cup cottage cheese with some assorted fruit and 1/2 scoop of the same protein powder with water. (Loving my messy placemat and winnie the pooh spoon haha)

Dijon Chicken Beans Rice Dijon Chicken Rice

8:00pm Dinner(a little late I know, I usually eat earlier!): Chicken, serving of mushroom fried rice made with egg, olive oil/mushrooms, green beans with a dash of butter, salt/pepper and vinegar.

Chocolate Covered P. Seeds

8:30pm Mini Dessert! These dark chocolate covered pomegranate seeds were a Christmas present and I kept meaning to try them! I finally had a small handful today and they were absolutely delicious! They will probably become my new special treat :).

PB Protein Bars

10:30? Bedtime Snack -Will eat when hungry but I am most likely going to have 2 squares of my awesome homemade peanut butter protein bars with 1/2 tbsp almond butter on top! Soo good, this is a great treat.

 

So that’s my daily eating habits in a nutshell. This isn’t exactly a typical day because usually I would eat some sort of variation of eggs with more veggies for breakfast and cottage cheese with a tbsp of peanut butter or nuts for my late night snack but I am trying to mix things up a bit!
