Honestly I am not sure why I didn't post this recipe sooner! I eat this almost weekly and it's one of my favourite simple meals! It's so filling and delicious, I don't feel like I am missing out at all when I eat this awesome dinner. It's better than TACOS. I'd never thought I would say that but yes I prefer this salad to regular tacos! It's also high protein and lower in carbs. Serves 1:

Ingredients:
-1 cup romaine lettuce(I estimate, it may be a little more)
-1/4 of a large tomato chopped
-1/4 or 1/5 of a large avocado chopped
-1 chopped green onion
-4oz lean ground beef cooked with taco seasoning(I use el del paso)
-1/2 a 4:9 sprouted elzekiel wrap(could sub a whole wheat wrap)
-a few chili pepper flakes(to taste, more if you like spicy!)
– sprinkle or more of cayenne pepper to taste( again more if you like spicy!)
-sprinkle of low-fat shredded cheddar cheese Mix!
-2-4 tbsp salsa
-2-4 tbsp greek yogurt OR low-fat sour cream

Directions: Place first 4 ingredients in a bowl. Heat up your taco meat in a pan with seasonings or reheat pre-cooked taco meat. Heat up your elzekiel wrap in a microwave between two pieces of paper towl barely dampened(just to keep the wrap from becoming dry) Or heat it on an oven rack until crispy (I prefer soft in this salad). Place your cheese & meat onto your salad and break up the wrap into pieces on top. Top everything with your seasonings to taste and the salsa/greek yogurt. Mix together and enjoy!
