So here is another recipe to cool you down on those warm spring days we are having this year! It’s beautiful to look at and tastes great too! Best part is..you can eat the whole bowl without an ounce of guilt. Why? Well..because it contains: 255 calories, 3g fat(0g without topping), 21g protein & 5g fibre. This creamy delicious strawberry-banana ice cream is a play off of my original Coconut-Banana-Mango Ice Cream recipe. I decided to substitute strawberry for mango after my mom came home with probably the largest bag of frozen strawberries I have seen in my life(from costco of course). & I have to say, I can’t decide which kind I prefer! They are both completely delicious! Hey all! I thought it was about time I posted a new recipe! I can’t even remember the last time I shared one with you guys! But this recipe was worth the wait..This easily just became my new favourite go-to snack. This is absolutely delicious and is wayyy better for you then any regular ice cream! It can actually be eaten as a meal replacement (highly recommend it for breakfast!). It’s perfect for the warm weather coming up. It even looks like spring haha :). So now to the details I know you all want to know.. This little treat packs a good 284 calories, 5g fibre, only 3g fat, 21g yes 21g protein!(no protein powder!), & 41g carbs. You are also getting lots of healthy vitamins & nutrients from the fruit! So now how does that crazy high protein number come in when there is no protein powder you may ask?   So this morning I decided I was going to be adventurous and create the best protein waffles ever! I made the batter and everything looked/tasted awesome. Now you know when you get those moments of pure genius? Well this morning was sadly not one of those moments…I acidentally poured wayyy too much batter onto my waffle maker which resulted in some sort of volcanic eruption on my kitchen counter. It literally spilled out for a good 30 seconds before slowing down. This was just a great joy to clean up. Anyways after that disaster I still wanted to use up the awesome raspberries and cream cheese icing I had made in advance. So instead of waffles, todays recipe is an experimental raspberry lemonade protein muffin! When I later calculated the macros I could not believe how much protein this little thing had! It also tastes pretty great too! P.S ignore my second mistake of forgetting to spray the ramekin with oil ahead of time..woops. I was so hungry I lost track of what I was doing! Yours should not come out with the brown ring around the sides :). Without further ado, here is my breakfast recipe!
Raspberry Lemonade Protein Muffin with Lemon Frosting and Raspberries
1 tbsp coconut flour
1 tbsp vanilla protein powder (I used french vanilla designer whey!)
1/4 tsp baking powder
2 tbsp egg whites(or 1 large egg white)
2 tbsp plain 0% greek yogurt
2 tbsp banana
1 tbsp almond milk (or another low-fat milk)
1-2 tbsp thawed raspberries
1/2 tsp vanilla
1/2 tsp baking powder
1/8 tsp lemon zest
1/4 tsp lemon juice
Frosting:
1 tbsp low-fat cream cheese 1g
2 tbsp 0% plain greek yogurt 3g
2 drops stevia(or another sweetener)
1/8 tsp lemon zest
1/4 tsp-1/2 tsp lemon juice (depending on how much lemon you like)
(Combine all ingredients in a small bowl and refrigerate until ready to use.)
Optional additional topping: Thawed raspberries with a little sweetener and lemon juice!
Directions: Preheat oven to 350* or alternatively you could try this in the microwave(I have yet to try this method), SPRAY A RAMEKIN or large muffin cup with oil. Combine wet/dry ingredients together and add lemon juice/zest to taste. Lastly stir in raspberries. Pop in the oven for about 28-30min and serve with lemon frosting and raspberries. Enjoy!
*Note* You could probably increase the oven temp. slightly and bake for a little less time. This was my first time making this so I can’t personally vouch for the results.

gm5 gm2Happy almost Easter Everyone! I hope you all are excited for the long weekend. What are your plans?  For me Easter is always spent with my grandparents at their farm. I love it there and I get to see all my cousins, aunts and uncles as well. It’s a long drive to get there and we are leaving super early tomorrow (yes I know I should get to bed). So instead of going to bed on time I of course decided to create a breakfast that I could just eat on the road tomorrow, already pre-made. But what I wanted was for my breakfast to include some kind of veggie but be sweet and delicious at the same time..and thus, the Green Monster Breakfast Bars were born. Sorry, no hiding the vegetables in these. The pops of green spinach stick out all throughout these tasty bars. But have no fear, the taste is one thing that is hidden! The ripe banana takes over and lightly sweetens the bar. It also keeps them chewy and moist.

Hey guys! I finally tried adding spinach to my smoothie today! It actually was amazing! Thanks Tara for the awesome idea :). I feel so good knowing I am getting some greens in at breakfast too now. This smoothie ended up being huge! It was almost spilling out of my little blender haha. Shown in the picture isn’t even the whole smoothie! But it kept me more full then usual. Did I mention it tasted super good? Plus..I got a new protein powder that is absolutely amazing. Hands down the best one yet! It actually makes my smoothies taste better!
