
Keto Maple Walnut Bites! The perfect little snack when you have a sweet craving.
Super soft in the center with little bites of walnuts and maple glaze.
These are no-bake and only take minutes to put together! A great keto dessert to make if you are looking for something quick and easy.
Ingredients In Keto Maple Bites
- Almond Flour – I use the Kirkland Costco brand of almond flour (I buy it in bulk on Amazon or at Costco itself occasionally) for this recipe. As I’ve noted in many of my past recipes, the brand of almond can affect the final outcome of the recipe because absorbency can vary depending on how the flour has been processed.
- Powdered/Granular Monkfruit Erythritol Sweetener – I use the SoNourished brand for both granular and powdered sweetener and love it! The powdered is the best option for no-bake goods and desserts where you want a very smooth final product. But it bakes well in any recipe. **UPDATE** lately I’ve switched over to THIS brand of powdered sweetener because of trouble ordering the first one so you can order whichever is easier for you!
- Xanthan gum – a great way to improve elasticity in gluten-free baked goods. It’s used alongside vital wheat gluten to provide the best possible “crust-like” texture. If you do not have this ingredient you can still go ahead with this recipe but I’d recommend it if you can get your hands on it.
- Sugar Free Maple Syrup – I've used a few different ones but currently I am using Choczero!

- Nutritional Scale – I’ve used this scale for almost every single recipe on this blog…I’ve had it for over 4 years and it’s still yet to fail me! I only replace the batteries maybe once per year.
Keto Maple Walnut Bites
Ingredients:
Serves: 10
Maple Walnut Bites
- 3/4 cup, almond flour, 90g
- 2 tbsp powdered monkfruit/erythritol sweetener
- 1/2 tsp xanthan gum, optional
- 3 tbsp butter, softened, 45g
- 3 tbsp, sugar free maple syrup, room temperature, 45g
- 1/2 tsp vanilla extract
- 1 tsp maple extract
- pinch of salt
- 2 tbsp chopped walnuts, 15g
Glaze
- 4 1/2 tbsp powdered monkfruit/erythritol sweetener, 55g
- 1 1/2 tbsp light cream or milk, 22g
- 1/2 tsp vanilla extract
- 1 tsp maple extract
Directions:
- In a bowl, add your softened butter, sugar free syrup, vanilla and maple extract. Mix well until smooth (you can heat this mixture for a few seconds in the microwave if it isn't blending well).
- Next add in your sweetener, almond flour, xanthan gum and salt. Mix well until a thick dough forms.
- Add your walnuts and give the dough another quick mix.
- Line a plate or baking sheet with parchment paper and using your hands, begin rolling the dough into balls then place each one on the plate.
- Freeze these for ~10-20min.
- During this time, whisk together all of your glaze ingredients in a small bowl until smooth.
- Drizzle the glaze or dip the maple walnut bites in it directly. Freeze again for 1-3 hours or until the glaze has set and the bites have hardened up a bit.
Enjoy your Maple Walnut Bites! You can store these in a ziplock bag in the freezer OR in your refrigerator for a softer texture.
