Ingredients

Maple Walnut Bites

  • 3/4 cup almond flour 90g
  • 2 tbsp powdered monkfruit/erythritol sweetener
  • 1/2 tsp xanthan gum optional
  • 3 tbsp butter softened, 45g
  • 3 tbsp sugar free maple syrup room temperature, 45g
  • 1/2 tsp vanilla extract
  • 1 tsp maple extract
  • pinch of salt
  • 2 tbsp chopped walnuts 15g

Glaze

  • 4 1/2 tbsp powdered monkfruit/erythritol sweetener 55g
  • 1 1/2 tbsp light cream or milk 22g
  • 1/2 tsp vanilla extract
  • 1 tsp maple extract

Instructions

  • In a bowl, add your softened butter, sugar free syrup, vanilla and maple extract. Mix well until smooth (you can heat this mixture for a few seconds in the microwave if it isn't blending well).
  • Next add in your sweetener, almond flour, xanthan gum and salt. Mix well until a thick dough forms.
  • Add your walnuts and give the dough another quick mix.
  • Line a plate or baking sheet with parchment paper and using your hands, begin rolling the dough into balls then place each one on the plate.
  • Freeze these for ~10-20min.
  • During this time, whisk together all of your glaze ingredients in a small bowl until smooth.
  • Drizzle the glaze or dip the maple walnut bites in it directly. Freeze again for 1-3 hours or until the glaze has set and the bites have hardened up a bit. Enjoy your Maple Walnut Bites! You can store these in a ziplock bag in the freezer OR in your refrigerator for a softer texture.
