
Good afternoon everyone!(Felt like I needed a new intro lol). Who's hungry for an awesome new recipe that takes minutes to make? These amazing wraps are super healthy, made with fresh ingredients and fill you up without making you feel too heavy! If you've ever had a Slouvlaki wrap, you know they are really good! And what would these lettuce wraps be without creamy tzatziki sauce?? So without further ado, I give you my newest creation: Chicken Slouvlaki Lettuce Wraps.
Ingredients:
Tzatziki Sauce:
1/4 cup greek yogurt
3 tbsp diced cucumber(small pieces)
1/2 tsp lemon juice or to taste
1/4 tsp dried dill weed
1/8 tsp pepper
1/8 tsp salt
1/4-1/2 garlic clove minced
Directions: Combine all ingredients and refrigerate for at least 2 hours before serving.
Wrap Filling:
-1 tsp olive oil
-1/4 large green pepper chopped
-1/4 large red pepper chopped
-1/4 small onion chopped
-1/4 tsp garlic powder (or you could use real minced garlic)
-1/4 tsp thyme
-1/4 tsp oregano
-1/8 tsp pepper
-1/4-1/2 cup shredded plain cooked chicken breast(I used canned, you could also use uncooked and just add earlier)
-1/8 tsp salt(optional)
-lemon juice to taste
Wrap:
-2 pieces romaine lettuce
-1/4 chopped cucumber
-1/4 chopped tomato
Directions: Place a small frying pan over low-medium heat, add olive oil then add the onions and saute until they become translucent, add red/green pepper and stir-fry until they are cooked through(takes about 4-5min). Add all of your spices except the salt/pepper. Now lower the heat and toss in the chicken, cooked everything until heated through. Season with salt/pepper and lemon juice to taste. Take off the heat and place the filling on both wraps. Top the wraps with cucumber and tomato pieces then drizzle with Tzatziki Sauce. Serve hot with a wedge of lemon! Enjoy!
*You could also serve this over rice or in a whole wheat pita!

Thanks! Lettuce wraps are a great replacement for bread when you feel like something lighter, there are so many possibilities for toppings!
