I had this burger the other night at the strangest place…the movie theatre! YUP. I ate a delicious burger while watching the newest 50 Shades release. We were in the VIP section where they take your order, have heated seats and chairs that are basically lazy-boys. I don’t think I can ever go back to regular movie theatres guys..
BUT that’s beside the point. This burger was delicious! It had goat cheese, avocado and a bruschetta topping. The kitchen staff were wonderful in accommodating my bun-less request and the burger came out looking beautiful!
After eating it, I was positive I would have to re-make it at home considering how delicious it was and it really is a nice light alternative from eating foods heavy in cream and cheese.
This post is less like a burger recipe and more like a topping recipe, lol. But it was so good I had to share. I bought the burgers frozen (I used these) but you can make your own fresh, maybe even use some greek spices and stuff them with goat cheese…hmmm future recipe idea I think!
Anyways, here’s how to put together this delicious burger:
-Beef Burger Patty (Homemade, store-bought, your choice!)
-1-1 1/2oz thick slice of fresh goat cheese
-1/2 a small avocado(about 40-50g) sliced thinly
- 1/2 a roma tomato chopped into small pieces
- 1 tbsp(7-10g) grated fresh parmesan
- 1 tsp olive oil
- 2 tsp balsamic vinegar
- 1/4 tsp basil
- 1/8 tsp garlic powder
- salt/pepper to taste
- Optional: Green or red onion
- Mix all bruschetta ingredients together in a small bowl and refrigerate for at least 1/2 an hour to blend flavours.
- Cook burger to your desired liking.
- Place small pieces of romaine on a place to create a bed for the burger.
- Immediately top the burger with the goat cheese, avocado slices and then the bruschetta.
- Consume with a fork and knife. Simple as that!

Goodmorning! Ready for a delish natural vitamin/fibre/protein packed smoothie to start your day?? I totally made up the name for this by using LEO as a cute short form. The actual full name would have been Stawberry Mango Lettuce, Egg white & Oatmeal smoothie so I thought I’d make it easier on you all and shorten it like we do with BLT. haha. 🙂 So I know to some this combination of flavours sounds weird and not to appealing but if you’ve never tried a smoothie with these ingredients before, then your in for a surprise! The oat flavour pairs really well with the fruit and the romaine blends so you hardly know it’s there, covered by the sweet taste of strawberry and mango. Plus egg whites are a great source of protein without adding any flavour. Overall I loved the tangy/sweet taste of this shake! I will be making it again! Let me know if you try it :).
Serves 1-2 (This makes a lot! so you could probably turn it into 2 servings if you’d like!)
-1/2 cup liquid egg whites
-1 cup frozen strawberries(140g)
-3/4 cup frozen mango(140g)
-7-8 leaves of romaine lettuce(100g)
-2 tbsp large flake or rolled oats
-1 tbsp flax seed
-1/4 tsp vanilla extract
-1/2 cup water (more or less depending on how thick you like your smoothie)
-1/8 tsp xanthan gum (optional but recommended for a thicker smoothie!)
-Optional: pinch of sweetener of choice(I didn’t add any but you can if you like your smoothies sweeter!)
Directions: Combine all ingredients in a blender until very smooth! Serve in a bowl and eat with a spoon or a cup with a straw, whichever way it will be delicious! Enjoy!

Hey guys, if you are feeling tired and run down before your workouts, don’t turn straight to artificial supplements and pre-workouts! First try this delicious smoothie. It gives a great energy boost naturally and lots of important vitamins and minerals all packed into a delicious sweet treat! It’s great right before a workout or as a filling breakfast to start your day! Let me know what you think :).
-1/2 cup raw liquid egg whites (pasteurized)
-1 ripe frozen banana(120g)
-1/2 cup frozen mango(70g)
-1/2 cup frozen peaches(70g)
-6 large leaves of romaine lettuce chopped(90g)
-1/2 cup-2/3 cup water(depending on how much you need to blend, mine worked with a little over 1/2 cup)
-1 tsp flax seed
-Optional: few drops of vanilla extract, few drops of coconut extract, stevia/truvia or another sweetener such as honey to taste.)
Directions: Place all ingredients in your blender and blend on high until smooth and creamy! *Note* blend a little longer than usual so the romaine gets completely blended with no little pieces.

Brighten up any cloudy morning with a beautiful breakfast of sunny-side up eggs over fresh avocado lettuce wraps. These little wraps will keep you full for hours with a large serving of healthy fats, fibre and protein. This recipe is also paleo and vegetarian friendly! This perfect breakfast can’t get any better…
-2 large romaine leaves
-2 thick slices of a large tomato chopped (1/2 a small tomato)
-1/2 a large avocado sliced thinly
-1-2 tbsp finely chopped red onion
-1 whole chopped green onion
-1 pinch of garlic powder/onion powder
-1 pinch of chili pepper flakes(optional for added spice)
-salt/pepper to taste
-2 large eggs + extra salt/pepper to taste
Directions: Place the 2 romaine leaves on a large plate and sprinkle tomato, avocado, red onion, green onion, garlic/onion powder and red chili pepper flakes on top. Meanwhile, preheat a frying pan over low-medium heat sprayed with a little olive oil cooking spray. Cook 2 eggs until just set(middle still runny) by cooking gently on each side for about 1-2minutes. (while cooking sprinkle well with salt and pepper).
Take off the hot eggs and top each romaine leaf with one each. Grab a fork and knife & break the yolks of each egg letting the beautiful yolk spill over your lettuce wraps! Enjoy!

These amazing wraps are super healthy, made with fresh ingredients and fill you up without making you feel too heavy! If you’ve ever had a Slouvlaki wrap, you know they are really good! And what would these lettuce wraps be without creamy tzatziki sauce?? So without further ado, I give you my newest creation: Chicken Slouvlaki Lettuce Wraps. Take me to the recipe!
This is a simple recipe that I made when I was in a rush to get out the door. It only requires about 5 main ingredients!
-1/2 Avocado chopped
-2 hardboiled eggs chopped with salt and pepper
-1/3 cup romaine lettuce shredded
-1/2 a small tomato chopped
Directions: Combine everything in a bowl and eat up! Simple as that.
I made this lunch up completely on the spot with whatever I had in my fridge and actually it turned out tasting way better than I had hoped! Here’s the ingredients :)…
-2 Large leaves of romaine
-1-1.5 tbsp spicy hummus
-1/4 of a large avocado
-20g fig goat cheese(or any you have available!)
-1/2 a small tomato
-1/8 cup chopped red onion
-1 small piece of chicken chopped (I just used left over dijon chicken!)
-sprinkle of walnuts
-1/4 tsp red pepper flakes(or to taste, I like things spicy!)
-1/8 tsp garlic/onion powder
-sprinkle of basil/oregano
-salt/pepper to taste
-drizzle of balsamic vinegar
Spread hummus onto leaves, throw on the avocado and sprinkle lightly with garlic/onion powder, add goat cheese, tomato, onion, chicken, walnuts, then sprinkle basil/oregano(more oregano then basil)/salt/pepper to taste. Then drizzle balsamic to your liking. Enjoy! 🙂
