
Hey everyone! I haven't been able to post in a while but finally it's the long weekend so I have sometime to post my latest recipes! 🙂 To start my posts off I have an awesome new way for you to eat oatmeal that will have you enjoying every last bite!
Serves 1:
Ingredients:
1/3 cup dry quick oats
2/3 cup unsweetened vanilla almond milk
1/4 tsp vanilla extract
1 dash of salt
1/4-1/2 tsp cinnamon(depending on your tastes)
3-4 drops of stevia or another sweetener such as honey to taste
1 tbsp sugar-free natural jam( I used this amazing strawberry rhubarb jam!)
1/4 cup chopped assorted berries (I used sliced strawberries, blackberries and blueberries)
1 tbsp slivered almonds
Optional: additional granulated splenda or stevia to sprinkle on top
Directions: Combine the dry quick oats with the almond milk and place in the microwave on high for about 2:00 min., stir then microwave again for another 20 seconds or so, just until the oats are not to running and almost fluffy. Now remove from the microwave and stir in everything except the jam, berries and almond slivers. Once combined and sweetened to your liking, swirl in the jam on top and then add berries and almond slivers. Sprinkle with additional sweetener and extra cinnamon. Enjoy!
