
This recipe is not something new, I created it about 2 years ago when I first tried oatmeal. I used to hate oatmeal but after adding in a few of my favourite ingredients, it is now one of my favourite breakfasts. I hope you all can enjoy this decadent breakfast as much as I do!
Ingredients:
-1/3 cup oatmeal
-enough water or milk to almost cover oats(or the amount you normally like in your oats such as 2/3 cup, I put less because I like them thick!)
-1/2-1tbsp cocoa powder
-1/2 tsp vanilla extract
-1/2 a banana mashed
-1/4 tsp vanilla
-2 drops coconut extract(or to taste)
-1 tbsp splenda(or other sweetener to taste)
-1/4 tsp cinnamon
Topping:
-walnut pieces(or any other nut you prefer)
-handful of blueberries (again, could sub with another fruit but these are my favourite!)
-sprinkling of cinnamon to taste
-extra sweetener/splenda
-1 tsp carob chips
Directions: Start by combining cocoa powder and dry oats in a microwavable bowl. A good rule of thumb is to add enough cocoa powder to coat all of your oats and turn then slightly brown. Add enough water to almost cover the oats(Don't add too much!!)Put the oats in the microwave for about 2 minutes. Take out and stir in your extracts, cinnamon & sweetener. Then add your mashed banana stirring until just combined. (Taste and add more of any ingredient if you feel necessary at this time). Now place the bowl back in your microwave for about 10-15 secs. Take out and top with the above ingredients or anything you like! Enjoy!!
Don't like chocolate? Try leaving out the cocoa powder and adding a bit more cinnamon and some different fruit toppings like strawberries and raspberries!
