A cookie you can eat for breakfast because there's no sugar added, it's grain free and packed with healthy fats and fibre BUT STILL tastes delicious…DEFINITELY COUNT ME IN.

I am all about the simple recipes lately and this one is now exception. Mix your ingredients, microwave and done. Breakfast or.. a snack if you are a normal person who doesn't eat cookies for breakfast like me.

Tips For Making a Keto Microwave Snickerdoodle Cookie

Keto Microwave Snickerdoodle Cookie

Serves: 1 large cookie

Ingredients:

  1. In a small bowl, combine all of your dry ingredients.
  2. Add the butter and vanilla extract and mix well until a dough forms. Use your hand to shape it into a ball.
  3. Flatten the dough slightly on a small greased plate (see photo) and sprinkle with granular sweetener and cinnamon.
  4. Microwave for roughly 45s-1min (see tips). Enjoy warm with a spoon or cool fully to be able to remove it from the plate!

Keto Microwave Snickerdoodle Cookie

  • 2 tbsp almond flour (15g)
  • 1 tbsp coconut flour (8g)
  • 1- 1 1/2 tbsp powdered monkfruit/erythritol sweetener
  • 1/4 tsp cinnamon (or 1/8)
  • 1/16 tsp xanthan gum (optional, helps with texture)
  • pinch of salt
  • 1 1/2 tbsp salted butter (softened OR 1 1/2 tbsp coconut oil for dairy free)
  • 1/8 tsp vanilla extract
  • 1 tsp heavy cream (if needed to moisten dough)
  • additional cinnamon and granular sweetener for topping
  1. In a small bowl, combine all of your dry ingredients.
  2. Add the butter and vanilla extract and mix well until a dough forms. Use your hand to shape it into a ball.
  3. Flatten the dough slightly on a small grease plate (see photo) and sprinkle with granular sweetener and cinnamon.
  4. Microwave for roughly 45s-1min (see tips). Enjoy warm with a spoon or cool fully to be able to remove it from the plate!
  • If you find your cookie batter a tad dry, add a teeny bit of heavy cream to moisten it up. 
  • This cookie is great with cream cheese substituted for half the butter and added pecans or walnuts!
  • When baking the cookie, start with 45s then add 10-15s as needed. My microwave bakes quite slow and mine was done at 1min and 10 seconds. 
  • Feel free to break the dough in half and microwave two smaller cookies if you want to reduce the calories!
