A Keto Microwave Snickerdoodle Cookie that only takes 1 minute? Count me in.
A cookie you can eat for breakfast because there's no sugar added, it's grain free and packed with healthy fats and fibre BUT STILL tastes delicious…DEFINITELY COUNT ME IN.
I am all about the simple recipes lately and this one is now exception. Mix your ingredients, microwave and done. Breakfast or.. a snack if you are a normal person who doesn't eat cookies for breakfast like me.
Either way, I hope you enjoy this Keto Microwave Snickerdoodle Cookie, it's great with a cup of hot coffee or tea.
Ingredients In a Microwave Keto Snickerdoodle Cookie
- Almond & Coconut Flour – I use the Kirkland Costco brand of almond flour (I buy it in bulk on Amazon or at Costco itself occasionally) and this brand of coconut flour for this recipe. As I’ve noted in many of my past recipes, the brand of almond and coconut flour can affect the final outcome of the recipe because absorbency can vary depending on how the flour has been processed.
- Powdered Monkfruit Erythritol Sweetener – I use the SoNourished brand for both granular and powdered sweetener and love it! The powdered is the best option for no-bake goods and desserts where you want a very smooth final product. I also used the powdered in this recipe because it works great in baked goods but ALSO creates perfect frosting every time! **UPDATE** lately I’ve switched over to THIS brand of powdered sweetener because of trouble ordering the first one so you can order whichever is easier for you!
- Xanthan Gum – This is used to create a batter more similar to that of white flour. It helps give keto baked goods a chewier dough-like texture. This is optional in this recipe but I'd recommend it if you plan to do lots of keto baking!
Tools I used to Make The Keto Microwave Snickerdoodle Cookie
- Low Carb Substitution Guide – This is totally optional but if you like my recipes, I now have a $5 guide available with all of the substitutions I use to create every recipe on my site. You can use this to convert old traditional recipes and create new keto recipes! You can purchase it here and/or read more if you are interested. 🙂 I appreciate your support so much guys!
- Nutritional Food Scale – AKA my best friend. This little buddy has been with me for over 4 years and never fails. Perfect measurements and only needs the batteries replaced maybe once a year!
Tips For Making a Keto Microwave Snickerdoodle Cookie
- If you find your cookie batter a tad dry, add a teeny bit of heavy cream to moisten it up.
- This cookie is great with cream cheese substituted for half the butter and added pecans or walnuts!
- When baking the cookie, start with 45s then add 10-15s as needed. My microwave bakes quite slow and mine was done at 1min and 10 seconds.
- Feel free to break the dough in half and microwave two smaller cookies if you want to reduce the calories!

This was perfect! I hardly ever crave sweets and I’ve never eaten a Snickerdoodle cookie before so I wasn’t quite sure what to expect. We loved these! Just the right amount of sweet plus the cinnamon to make is spicy. Very quick and easy to throw together and I loved that it was microwaveable, too. Definitely a keeper! Thanks for sharing!

What is a grease plate? Do you mean "greased plate"? Like a regular ceramic plate with butter on it? I'm confused.

Sorry yes you are correct! Just a lightly oiled or buttered plate!
