These Keto Cheesecake Stuffed Snickerdoodle Cookies are the perfect soft and chewy cookies.
They combine two of what I've deemed to be reader recipe favourites, Snickerdoodles and Cheesecake. (See some of my past most popular recipes at the bottom of this post!)
These cookies are based off my previous Keto Cheesecake Stuffed Chocolate Chip Cookies but for this recipe I've enhanced the texture of the cookies themselves with a few ingredient changes! Plus of course, added some cinnamon.

No Bake Keto Snickerdoodle Cheesecake Bars.. something I'd only dreamt about (seriously) but never made until now. I had originally planned on baking these but with how hot it was outside today I just wanted something cold and didn't feel like turning on the oven.
This was the perfect time to throw it back to the no-bake style cheesecake my Mom used to make for use.
No bake cheesecake is great because it offers a creamier texture than baked cheesecake and is SO easy to make! The possibilities are endless.
This version is similar to the original one we used to eat but I've made it even simpler and keto friendly! These No Bake Snickerdoodle Cheesecake Bars only take about 10-15min total to put together then you just place them in the fridge and they are ready for dessert later that day!
This is a great summer recipe you can make to impress friends and family.

A Keto Microwave Snickerdoodle Cookie that only takes 1 minute? Count me in.
A cookie you can eat for breakfast because there's no sugar added, it's grain free and packed with healthy fats and fibre BUT STILL tastes delicious…DEFINITELY COUNT ME IN.
I am all about the simple recipes lately and this one is now exception. Mix your ingredients, microwave and done. Breakfast or.. a snack if you are a normal person who doesn't eat cookies for breakfast like me.
