
Today wasn't the best day and I was really tired when I got home, this recipe was simple to whip up and took the place of me eating a tub of icecream alone..haha. It actually is loaded with good things for you and is extremely high fibre, paleo, gluten-free and low-carb. So if your day needs some brightening up, make this recipe…
Ingredients:
-1/2 an avocado(chilled preferably but room temp. will work too!)
-1 tsp sun butter (or you could sub peanut butter/almond butter if you prefer, although I am a peanut butter lover I actually really like sunbutter in this recipe!)
-1 pinch of salt
-6-9 drops stevia(I like mine pretty sweet! Feel free to add more or less or sub with another sweetener like 1/2 tsp honey, pure maple-syrup, agave etc.)
-1.5 tbsp unsweetened cocoa powder
Toppings:
-1/2 tbsp carob chips(about 18 if you want to be exact)
-about a tsp of cacao nibs(The crunch!, even if you don't like these plain, they really taste good in here!)
-1 large strawberry chopped
-optional alternate toppings: any chopped nut of choice, dark chocolate pieces, blueberries, unsweetened shredded coconut etc.
-sprinkling of stevia or splenda granular sweetener(you could also use coconut sugar)
Directions: Simply put all the ingredients in a bowl and begin by mashing everything together with a fork until the avocado is well combined. Then to really smooth it out, take out an electric beater and beat until there are pretty much no more chunks and the pudding is smooth. Taste and add additional sweetener if necessary. Now place in the freezer for about 8-9min. (if eating immediately, fridge is fine if you want to keep it there and save it for later). Once nice and cold, take out and garnish with toppings. Serve!
*Tip* If you find the mixture to “avocadoey” for some reason, I recommend using sunflower butter and adding additional cocoa powder/sweetener if necessary.
