Molten Lava Microwave Cake Molten Lava Cake4This was a total experiment and for once it actually worked out. That does not happen often for me! I was prepared with a back-up breakfast of eggs which was uneeded. This breakfast will hit anyone's chocolate craving. I was left scraping the bowl looking for more..Thankfully this recipe only makes one! This only takes minutes to make so it's great for a quick breakfast.  Plus it actually contains a lot of protein(no powder)! Anyways here is the recipe…

Ingredients:

Dry:

-1 tbsp coconut flour

-1 tbsp unsweetened cocoa powder

-1/4 tsp baking powder

-pinch of salt

Wet:

– scant 1/4 cup egg whites

-1 tbsp mashed banana

-2 tbsp 0% plain greek yogurt (could sub 2 extra tbsp mashed banana, but I can't personally vouch for results)

-1/4 tsp vanilla extract

-6 drops stevia(or to taste, if you like sweeter add more!, if you don't have stevia feel free to use splenda or another sweetener)

-1 tsp almond milk (or more until desired cosistency, you don't want your batter to be too dry, coconut flour soaks up a lot of moisture! I recommend adding this last)

-1 tsp vegan butter (melt for 10 sec. in the microwave first and again stir in towards the end).(could leave out and add additional banana/greek yogurt but it may be a little less moist)

Chocolate centre:

-1/2 a square of lindt 70% dark chocolate (you could also use a whole square if your really craving some chocolate 😉 )

Directions: Spray a ramekin or mug with oil and stir in dry ingredients then add wet and stir together until well combined. Lastly Press a piece of lindt chocolate into the centre of the batter. Place in the microwave for about 1min or a little more. (I did mine in intervals, you want to make sure the top is cooked but the centre is still a bit undercooked so you don't end up with one of those rubber microwave cakes! Once done top with optional peanuts/almonds/pecans etc. and granular splenda. Serve and dig into that chocolatey centre. Cravings, destroyed.
