Cheesy Rice Bowl -A Quick & Healthy Dinner!

DinnerThis is what I eat when I have no time and don't feel like thinking much! It requires little prep and tastes awesome. It's also very filling! Here's what you'll need…


-2/3 cup cooked brown rice(1/3 cup uncooked rice) (cook with a little salt)

-1/3 cup chopped broccoli pieces

-1/3 cup  frozen peas & corn mix

-2-3 tbsp shredded low-fat cheddar cheese

-1/3 cup shredded plain chicken( I add a little salt & pepper to it)

-soya sauce to taste


Directions: Steam broccoli , covered in a microwavable bowl with enough water to almost cover the broccoli. Microwave for 2 & 1/2 – 3 minutes based on desired texture. Next microwave frozen corn and peas with a dash of water, covered for about 2 minutes. Drain water from all vegetables and season with salt & pepper.

If rice was not just previously cooked, heat separately with chicken until hot. Now combine everything in one bowl and place back in the microwave for several seconds if needed. Stir in soya sauce until seasoned to your liking. Top with shredded cheddar cheese. Now take a bite when the cheese is all melted and delicious!
