Super healthy and super delicious, this recipe is going in my books. It’s fast, easy and tastes like Mexico in a bowl..haha. Plus it has 24 grams of protein! Who needs tacos when you can have this for dinner?!
This is higher carbs but they all come from vegetables! So this is a great after-workout dinner!
-1/3 cup sweet potato, mashed (peel skin & then use a fork to pierce a sweet potato and put in the microwave for 5 minutes on high, mash)
-1/4-1/3 cup drained and rinsed black beans(from a can)
-3 tbsp thawed sweet yellow corn(mix with a little salt and a little extra cumin/ chilli powder)
-1/3 cup chopped plain chicken or canned chicken breast
-Homemade fajita seasoning: 1/2 tsp chili powder, 1/4 tsp cumin, 1/4 tsp paprika, 1/4 tsp cumin, 1/8 tsp garlic powder, 1/8 tsp onion powder, 1/8 tsp salt, 1/8 tsp splenda(or another sweetener), 1/8 tsp cayenne, dash of red pepper flakes(add more cayenne or red pepper flakes if you want more spice)
Optional: cooked red & green peppers
-2 tbsp salsa
-2 tbsp sour cream
-3 tbsp chopped tomato
-2-3 tbsp shredded low-fat mozzarella cheese
Directions: Place sweet potato in a medium-size microwaveable bowl and sprinkle with a bit of salt. Next, in a smaller separate bowl, stir together your chicken, black beans and fajita seasoning. Place this mixture on top of the sweet potato mixture. Now place your warm/thawed corn on top as well. Cover and place in the microwave on high for about 1:00 minute. You may need extra time if your sweet potato, chicken or beans were leftover from the fridge. Remove from microwave and stir, add additional cumin/chili powder or cayenne if needed & if required, place in for another 30 seconds or so. Once hot, top with shredded mozzarella cheese and put back in for another 25 seconds. Lastly remove from the microwave and top with tomato, sour cream and salsa. Mix it all together to look like a mess(it tastes best this way even if it doesn’t look pretty!..) & Enjoy! Yum!!
