3 Amazing Low-Carb Protein Pancake Recipes!

Banana Blueberry Protein Pancakes

Okay so if you saw one of my last posts, you could see the disaster pancake I created..Well this time I made the changes to the recipe like I said I would and now I have created 3 amazing low-carb pancakes for you to enjoy daily! Want the recipes?

1) Banana-Blueberry Protein Pancakes
These are probably my fav. of the 3 but personally I just love banana so of course I would opt. for these!

*Makes one large serving

Here's what you'll need:
-1/2 a banana mashed
-1/4 cup egg whites
-2 tbsp almond milk
-1/4 tsp vanilla extract
-cinnamon to taste(I put quite a bit)
-1 scoop good quality vanilla whey protein powder(I use PVL Creamy Vanilla)
-1/2 tsp baking powder
-1 tbsp flax seed
-pinch of salt
-Handful of fresh/thawed frozen blueberries

Directions: Heat a pan over low-medium heat. Spray with Pam. Combine all dry ingredients in a bowl. Stir in wet ingredients.(Don't over mix). Use a ladle to pour batter onto hot pan to form pancake shapes. Add a couple blueberries to the top of your pancake while cooking. Flip after 1-2 minutes on each side. (Look for browning or bubbles coming through.) Repeat until batter is gone. Take off heat and serve with sugar-free syrup or additional heated and mashed frozen blueberries. Enjoy!

2) Applesauce Peanut Butter Pancakes
1 scoop Protein Powder
1/4 cup egg whitesApple PB Pancake 1/2 tsp baking powder
1/4 tsp cinnamon
1/2 tsp splenda
1/2 tbsp peanut butter
1/4 tsp vanilla
pinch of salt
pinch of baking soda
1.5 tbsp apple sauce
2 tbsp cottage cheese
1-2 tbsp almond milk(as needed to moisten batter) (3g sugar, 10 carbs, 6.5g fat) (38g protein)

Directions: Heat a pan over low-medium heat. Spray with Pam. Combine all dry ingredients in a bowl. Blend together the wet ingredients in a food processor/blender until smooth. Stir in wet ingredients. Use a ladle to pour batter onto hot pan to form pancake shapes. Feel free to add a few almond slivers to your pancakes. Flip after 1-2 minutes on each side. (Look for browning or bubbles coming through.) Repeat until batter is gone. Take off heat and serve with sugar-free syrup or additional apple sauce/cinnamon. Enjoy!

**Note these would be really delicious with grated apple in them! I just didn't have any at the time.**

Choco-Strawberry

3) Strawberry-Chocolate Protein Pancakes
Lastly I started to get a little adventurous..lol these are probably the most unique ones I created!

*Makes one large serving

Ingredients:
-2 tbsp mashed strawberries (About 2-3 large, frozen,thawed in fridge overnight then mashed is best)
-3 additional thawed then chopped strawberries(reserve juices!)
-1.5 tbsp greek yogurt
-1/4 cup egg whites
-2 tbsp almond milk (if necessary)Chocolate Strawberry Protein Pancakes -1/4 tsp vanilla-1 tbsp flax seed
-1.5 tbsp cocoa powder
-pinch of salt
-tsp of splenda(or more depending on your tastes)
-1/2 tsp baking powder
-pinch of baking soda

Directions: Heat a pan over low-medium heat. Spray with Pam. Combine all dry ingredients in a bowl. Stir in wet ingredients except additional strawberry.(Taste to see if you need more of any ingredient). Use a ladle to pour batter onto hot pan to form pancake shapes. Add one chopped/thawed frozen berry + it's juices to the top of each pancake(If the strawberry is squishy from thawing that is perfect!) Flip after 1-2 minutes on each side. (Look for browning or bubbles coming through.) Repeat until batter is gone. Take off heat and serve with sugar-free syrup or additional mashed strawberries or both!. Enjoy!
