Okay so if you saw one of my last posts, you could see the disaster pancake I created..Well this time I made the changes to the recipe like I said I would and now I have created 3 amazing low-carb pancakes for you to enjoy daily! Want the recipes?
1) Banana-Blueberry Protein Pancakes
These are probably my fav. of the 3 but personally I just love banana so of course I would opt. for these!
*Makes one large serving
Here's what you'll need:
-1/2 a banana mashed
-1/4 cup egg whites
-2 tbsp almond milk
-1/4 tsp vanilla extract
-cinnamon to taste(I put quite a bit)
-1 scoop good quality vanilla whey protein powder(I use PVL Creamy Vanilla)
-1/2 tsp baking powder
-1 tbsp flax seed
-pinch of salt
-Handful of fresh/thawed frozen blueberries
Directions: Heat a pan over low-medium heat. Spray with Pam. Combine all dry ingredients in a bowl. Stir in wet ingredients.(Don't over mix). Use a ladle to pour batter onto hot pan to form pancake shapes. Add a couple blueberries to the top of your pancake while cooking. Flip after 1-2 minutes on each side. (Look for browning or bubbles coming through.) Repeat until batter is gone. Take off heat and serve with sugar-free syrup or additional heated and mashed frozen blueberries. Enjoy!

The recipes are quite different. I haven't tried cooking with protein powder yet. Is it like milk powder? Imagine.. 8 grams sugar just from the fruit. One has to be quite careful!

I'm not to sure about how it is in camparison to milk powder since I've never personally cooked with it but protein powder works great to substitute part or all of the flour in certain recipes! Also look at my peanut butter protein muffin post, those are my favourite way to eat it but it also goes really great in shakes! Just make sure you buy a decent tastin g kind because.they all have somewhat of an after taste, some more than others. This kind that I use is pretty good though ! It's nice and sweet already with little sugar added :) & also I know ! Fruit sugar can add up quick without people realized. I'm glad you pointed it out because a lot of people don't realize that sugar can be stopping them from losing weight. (Makes them 'skinny fat"). But that's a whole other post Haha sorry for rambling thanks for the comment !
