Super Fit Coleslaw


Who doesn't love coleslaw? This is a staple in my family's thanksgiving dinner but it's also great at a summer picnic!


This isn't my recipe sadly! But I did make a few tweaks! (I used a cabbage mix(much easier, already has shredded carrot in it!) splenda instead of sugar, a little more apple cider vinegar, fat-free mayo & green onion instead of yellow onion & probably a little more salt and pepper than necessary 😉 ) I also down-sized the recipe for one but look down below for a full sized recipe! It tastes great either way!

Coleslaw For One:

1.2 tsp milk
1.2 tsp buttermilk
1/2 tsp splenda
1/2 tsp vinegar
1/3 tsp lemon juice
a few drops of apple cider vinegar
shake of salt
shake of pepper
3/4 cup coleslaw
1 tsp green onion

=(4.5g sugar, 7carbs)

Directions
Combine mayonnaise, milk, buttermilk, sugar, vinegars, lemon juice, salt and pepper in a large bowl. Whisk well until the splenda is dissolved.
Add cabbage, carrot and onion, and toss well. Be sure cabbage, carrot and onion are chopped into very small pieces.

Cover and chill for at least two hours before serving. Overnight is even better.

*I chilled it for 8 hours but I have also put the sauce on right before eating and it still tasted good!
