This is a great way to get all 4 food groups in one perfect size serving! This combination of kielbasa, cheesy sauce, pasta and broccoli are great together.
Ingredients:
-1/3 cup dry egg noodles(or sub with whole wheat)
-1/4 cup chopped broccoli
-50g chopped turkey kielbasa
-pinch of salt
Alfredo Sauce:
-1 tbsp milk
-1.5 tbsp cottage cheese
-1 tbsp parmesan cheese
-1 pinch of cornstarch
-pinch of garlic powder
-pinch of salt
-pinch of pepper
-pinch of basil
Directions:
Cook pasta noodles in boiling water with a pinch of salt for about 10 minutes or until al dente. In the mean time, steam the broccoli until soft(you could also do this in the microwave) Set aside. Combine all the sauce ingredients except the basil in a food processor or blender until smooth(add more or less milk & cornstarch depending on the thickness you like) and heat in the microwave or a small sauce pan. Heat up the chopped kielbasa in a microwaveable bowl. Drain the pasta and add the noodles to a small ramekin along with the broccoli and kielbasa. Top with sauce and basil. Serve with a sprinkle of additional parmesan! (If you want you can heat everything together in the microwave if you find it isn't hot enough!)
