KETO CHOCOLATE COOCNUT BARS

These No Bake Keto Chocolate Coconut Bars provide a perfect energy boost ..all packaged into one delicious bar.

These bars are basically “health” in dessert form. (But they sure don't taste like it!)

The large dose of MCT's coming from the coconut oil and shredded coconut provide you quick energy and actually aid in increasing the level of ketones your body produces shortly after.

These bars also contain collagen which is especially great for growing healthy hair, skin and nails..along with improving your joint health!

But don't worry, if you don't have collagen, I've also added some substitution suggestions in the “Tips” portion below.

Overall, these bars make one super delicious quick and easy snack that makes staying in ketosis easy!

Tools I used To Make No Bake Keto Chocolate Coconut Bars

  • Low Carb Substitution Guide – This is totally optional but if you like my recipes, I now have a $5 guide available with all of the substitutions I use to create every recipe on my site. You can use this to convert old traditional recipes and create new keto recipes! You can purchase it here and/or read more if you are interested. 🙂 I appreciate your support so much guys!
  • Nutritional Food Scale – AKA my best friend. This little buddy has been with me for over 4 years and never fails. Perfect measurements and only needs the batteries replaced maybe once a year!

Tips For Making No Bake Keto Chocolate Coconut Bars

  • These bars are super simple to make. I would say the only real hard part is cutting them without cracking the chocolate. When I worked at my job at a French bakery/patisserie we would cut squares like these with a large, very sharp knife that was regularly dunked in hot water between slicing the squares. I find this to be the best way to do it without having them crack apart on you!
  • You can also let the bars come to room temperature slightly instead of cutting them straight from frozen to make it easier.
  • Lastly, if you don't have collagen, you can try replacing it with almond flour, more shredded coconut or nuts or even another flour (*note coconut flour absorbs more liquid so be careful not to add as much)

Ingredients In No Bake Keto Chocolate Coconut Bars

  • Coconut Oil – Fantastic for a keto diet because it contains MCT's (Medium Chain Triglycerides) which are a great energy source in ketosis.
  • Collagen Powder –  A great source of protein, collagen powder helps grow healthy hair, skin and nails. It also aids in joint health.
  • Powdered/Granular Monkfruit Erythritol Sweetener  –   I use the SoNourished brand for both granular and powdered sweetener and love it! The powdered is the best option for no-bake goods and desserts where you want a very smooth final product. But it bakes well in any recipe. **UPDATE** lately I’ve switched over to THIS brand of powdered sweetener because of trouble ordering the first one so you can order whichever is easier for you!
  • I use Krisda chocolate-chips in this recipe as they are just 2 NET carbs per tbsp.. but you can also use dark chocolate or lily’s chocolate-chips.
  • Coconut Extract – I just use the “imitation coconut extract” but if you can find pure coconut extract then that's even better!
