Have you ever gotten frustrated because as much as you love the keto way of eating.. you can’t help but feel just a little jealous when you see someone eating a delicious sausage breakfast sandwich with that nice buttery biscuit on top..Sure you could just eat the sausage, but what fun is that?  That’s no breakfast sandwich.

Personally, I think anyone on a keto diet should not have to feel deprived. That’s the ultimate goal of my blog and ALL of the recipes I create. They all are based off treats and meals that I enjoyed before keto and plan to CONTINUE to enjoy but with some minor changes and alterations ;).

(No-Bake) Keto Lemon Coconut Balls

(No-Bake) Keto Lemon Coconut Balls

Ingredients:

  • 1/4 cup(60g) cream cheese
  • 1 tsp 14% sour cream
  • 2 tsp fresh lemon juice
  • zest from 1/2 a large lemon
  • 1/2 cup+2 tbsp(77g) Almond Flour
  • 2 tsp Truvia
  • 1 tbsp Splenda (or to taste)
  • 1/4 tsp vanilla extract
  • 1/16 tsp salt

Coating:

Directions:

  1.  Combine all base ingredients until a thick dough forms.
  2.  Freeze the dough for 5-7min.
  3.  Mix your coconut and sweetener on a small plate or bowl.
  4.  Remove the dough from the freezer and roll it into 10 small balls. DSC_0764
  5. Coat each ball gently in coconut until fully covered.DSC_0767
  6. Place back on a plate and freeze for 30min-1 hour.
  7. Enjoy immediately or store in the fridge or freezer (depending on the texture you prefer) in an air-tight container!

Honestly I am not sure why I didn’t post this recipe sooner! I eat this almost weekly and it’s one of my favourite simple meals! It’s so filling and delicious, I don’t feel like I am missing out at all when I eat this awesome dinner. It’s better than TACOS. I’d never thought I would say that but yes I prefer this salad to regular tacos! It’s also high protein and lower in carbs. Lately I have been eating hummus like a mad women. Everyday when I get home from school I eat what seems like an endless amount of carrots and cauliflower with my spicy chipotle hummus. I swear, you’d better not come near me when I am eating my hummus because I WON’T share. I love that stuff. But..what happens when I run out of hummus half-way through the week and am frantically searching for a substitute?! Yup, I had to make this dill dip. Did I mention dill is one of my favourite seasonings? I love love dill pickle popcorn and dill pickle egg whites (yes I love dill pickle egg whites, call me weird). So what better way to have dill then in a delicious veggie dip. It tastes almost like sour-cream and onion dip! It is very low-fat and takes only seconds and a few simple ingredients to make.
