Low-Carb Chocolate Protein Icing!

Protein IcingI literally just made this and ate the whole bowl only to realize this is wayyy to sweet for a snack but as icing..OMG. It's perfect! It is the absolute perfect consistency, super light and fluffy, sweetness is right on & it's great to top any healthy cupcake/pancake/cookie.. whatever you want! It also takes only seconds to make and does not require a blender! How much better can it get??


1 scoop creamy vanilla trutein protein powder(I highly recommend this powder! If you don't have it, try using another casein protein powder that you enjoy, casein is much lighter and will make a nicer icing then whey).

*NOTE: my protein scoop is 34g and that is a pretty large serving, if yours is less, feel free to use less of the rest of the ingredients or add more than a scoop to get the correct amount of protein powder.*

1 tbsp unsweetened cocoa powder

1 tsp sugar-free/fat-free chocolate jell-o mix

3 heaping tbsp plain fat-free greek yogurt

1/8 tsp vanilla extract (or more to taste)

2 drops of stevia sweetener (1-2 tsp splenda or another sweetener, basically this is to taste, my protein powder is already pretty sweet!)

2 tbsp of almond milk or enough to create icing consistency (Just keep stirring until it's all combined before adding more! You don't need much!)

Directions: In a medium bowl, stir together all dry ingredients then add your greek yogurt, vanilla and slowly begin to add almond milk until desired consistency. Now add your sweetener to taste and feel free to add optional mint extract & carob or mini chocolate chips for mint chocolate chip icing! Now put a dallop of this on any of your fav. desserts and enjoy! 🙂
