This is a simple recipe that I made when I was in a rush to get out the door. It only requires about 5 main ingredients!
-1/2 Avocado chopped
-2 hardboiled eggs chopped with salt and pepper
-1/3 cup romaine lettuce shredded
-1/2 a small tomato chopped
Directions: Combine everything in a bowl and eat up! Simple as that.
I made this lunch up completely on the spot with whatever I had in my fridge and actually it turned out tasting way better than I had hoped! Here’s the ingredients :)…
-2 Large leaves of romaine
-1-1.5 tbsp spicy hummus
-1/4 of a large avocado
-20g fig goat cheese(or any you have available!)
-1/2 a small tomato
-1/8 cup chopped red onion
-1 small piece of chicken chopped (I just used left over dijon chicken!)
-sprinkle of walnuts
-1/4 tsp red pepper flakes(or to taste, I like things spicy!)
-1/8 tsp garlic/onion powder
-sprinkle of basil/oregano
-salt/pepper to taste
-drizzle of balsamic vinegar
Spread hummus onto leaves, throw on the avocado and sprinkle lightly with garlic/onion powder, add goat cheese, tomato, onion, chicken, walnuts, then sprinkle basil/oregano(more oregano then basil)/salt/pepper to taste. Then drizzle balsamic to your liking. Enjoy! 🙂
Simple, fast and delicious..Those are the kind of lunches I like!
Lunch was a typical assorted vegetable salad with green onions(all my salads contain these, I can’t live without them!) & 1 egg and a little chopped leftover turkey breast. Topped with a fat-free italian dressing!
For dinner I had another salad but this time is was sweet and crunchy! It had spinach, walnuts, strawberries, green onion(of course!) & some olive oil/white vinegar & 1/2 tsp splenda mixed together for a dressing. I ate this with a side of lemon chicken. Yummy 🙂
*Note that I don’t just live off of only salads haha I had many delicious healthy snacks today too! 🙂
Felt like experimenting after finding I still have a huge bowl of Quinoa and black beans in my fridge..Thought I would mix it up a bit and make something a little different! This is a delicious tropical/spicy dish! Very good as a side! Take me to the recipe!
I hardly ever eat quinoa and now I wonder why? I love it! It’s great to make a big pot of and have for the week. This recipe is a perfect side for chicken or any other high protein dinner. A small serving of this is super filling! Plus their is no oil added! Take me to the recipe!
Do I even have to describe this one? It’s on every restaurant menu everywhere and it’s hard to find someone who doesn’t enjoy it! But it’s always loaded with fat!
