Lunch Today: Coconut Curry Quinoa!

Coconut Curry Quinoa-Spoon
Felt like experimenting after finding I still have a huge bowl of Quinoa and black beans in my fridge..Thought I would mix it up a bit and make something a little different! This is a delicious tropical/spicy dish! Very good as a side!

This isn’t a very exact recipe, I just threw together about 1/4 cup rinsed/clean black beans, 1/4 cup quinoa, a handful of chopped orange peppers(steamed ahead of time in microwave). You could substitute any kind of pepper or vegetables you prefer. I just like the sweetness of the orange peppers with the coconut flavour. Then I threw in about a tsp of unsweetened shredded coconut and 1/2 tsp coconut oil,1/2 tsp curry powder, red pepper flakes, salt to taste(I added more afterwards), stirred and put everything in the microwave for about 45secs-1minute. & Topped it with green onion & stirred in a little cumin and cayenne last minute to spice it up even more.(I love spicy food)

Then I ate it!(Along with a side of turkey breast) TURKEY

This would be create with pineapple chunks or steamed carrots as well!
