No Bake Keto Caramel Pecan Bars

I'm going to be honest.. This No Bake Keto Caramel Pecan Bars Recipe..

This was a lazy recipe.

I did not feel like baking. 

I've been baking non-stop trying to get things ready for my first-ever longer recipe book, (IT'S AN EBOOK BUT STILL, SO EXCITED) which means..

..baking, photographing and writing content for 3 recipes at a time (1 of those being a blog post). Not to mention the actual recipe conception andddd the dishes that pile up, haha.

Basically I don't have a life at the moment. 

All I know is almond flour and too much coffee. LOL. 

But I'm super excited to get to share something with you guys that I think you'll ACTUALLY love. I'm super proud of it so far. 

The recipes in this book are going to be awesome, just know that. 

So for today's blog recipe, I got a little lazy and decided to make a no-bake dessert using some leftover caramel that I had made from another recipe. 

Although this No Bake Keto Caramel Pecan Bars Recipe is a very simple recipe, I'm actually quite pleased with how it came out. Sometimes simple is best (I need to learn that)

These are the perfect sweet, crunchy and gooey snack. 

The glaze can get a tad messy if you knock them around so I don't advise bringing on-the-go unless you store them in a flat Tupperware container. 

But you can help by freezing them prior to taking them somewhere. 

If you are just eating them straight out of the fridge them they are great! 

I made these with pecans but I'm sure they'd also be great with walnuts. You could even mix in some shredded unsweetened coconut if you were feeling crazy. 

The base of these bars is simply almond flour, salt, my Easy Keto Caramel Sauce & pecans. 

Mix together and press into the bottom of a loaf pan and you're already halfway down.

In another small bowl, you mix powdered monkfruit erythritol sweetener (or any other sweetener that is powdered) with a little softened cream cheese, vanilla extract and more of the caramel sauce to make a glaze. 

Spread that on top of the keto pecan bar base, toss it in the fridge for ~3 hours (or freeze if you are impatient) and you've got some Easy No Bake Keto Caramel Pecan Bars!

Slice and serve chilled.

Tips For Making Keto Caramel Pecan Bars

  • If you find your caramel sauce too thin, you can always add just a 1/2-1 tsp of cornstarch to it to cause it to thicken after it's finished cooking on the stove.
  • This recipe can also me made using a classic Keto Sweetened Condensed Milk Recipe if you prefer!
  • When slicing your bars, use a large sharp knife and clean it between slices for neat bars. You can also freeze the bars before slicing to make the process easier. 
  • You can also roll the base into balls instead of pressing into a pan, then refrigerate and use the caramel glaze as a dip later on!

How To Store Keto No Bake Pecan Bars

  • Store these bars in an airtight container in the fridge in a single layer for up to 5 days..
  • OR freeze flat on a baking sheet lined with parchment paper, then place in an airtight container and freeze until you want them next! 

**NOTE: This recipe uses 1 whole batch of my Easy Keto Caramel Sauce, which makes 1/2 a cup**

No Bake Keto Caramel Pecan Bars Recipe

Ingredients:

Serves: 8

Caramel Base

Caramel Glaze

Directions:

  1. Make the Easy Keto Caramel Sauce as directed. Set aside to cool. (You'll end up with ~1/2 cup)easy sugar free caramel sauce
  2. In a small bowl, mix together the almond flour, pecans and salt. almond flour and pecans
  3. Add 6 tbsp (or ~3/4) of the caramel sauce and mix until a thick dough forms. keto caramel sauce almond flour and pecansalmond flour caramel pecan batter
  4. Grease a 9×4 inch loaf pan and evenly press the mixture into the bottom. keto caramel pecan crust
  5. In another small bowl, add 2 tbsp or your 1/4 of leftover keto caramel sauce, cream cheese, sweetener and vanilla extract.
  6. Mix until smooth. sugar free caramel glaze
  7. Use a spatula to pour and spread the glaze evenly over the base. low carb caramel sauce
  8. Refrigerate for ~2 hours or until glaze has set and the base is firm.
  9. Slice into bars and serve chilled. Enjoy your No Bake Keto Caramel Pecan Bars!
