
Low Carb Keto Peanut Butter Blondies
These Low Carb Keto Peanut Butter Blondies are the chewiest, ooiest, gooiest keto bars you'll come across!
The are so good, even the pickiest of eaters will ASK YOU for the recipe. Seriously. Even your friend who refuses to eat pepper on eggs because it's too “spicy” will love them. (You know who I'm talking about)

These keto chewy peanut butter bars are made with natural peanut butter, almond flour and just a touch of coconut flour, xanthan gum and arrowroot starch to help with texture (don't worry, I've listed some tips for those of you who may not have all of these ingredients!)
The lack of flour and no baking powder in this recipe is what makes these keto peanut butter bars so gooey and brownie-like. The only thing that actually lifts them slightly is the eggs we add!
We also drizzled the top with some sugar free peanut butter glaze because you can never have too much peanut butter.

Can I make these Low Carb Keto Peanut Butter Blondies without almond flour?
If you don't have almond flour, you can still attempt these bars. Personally I prefer them with almond flour ( For my Canadian friends you can order it HERE if you don't have it.
But if you don't want to/can't purchase it, you can try making these keto peanut butter blondies using coconut flour alone. Just use 5 tbsp (35g) total coconut flour in place of the almond flour.
Can I make these Low Carb Keto Peanut Butter Blondies without coconut flour?
If you don't have coconut flour, you can still make these bars! I like to add small portions of coconut flour to majority of my recipes as it combines with almond flour to create the best possible “white flour-like” texture. (Click the link to see where to purchase coconut flour I use myself) For my Canadian friends you can order it HERE if you don't have it.
But if you don't want to/can't purchase it, you can make these keto peanut butter bars using almond flour alone. Just use 1 cup (112g) total almond flour instead of the 3/4 cup called for.
Can I make these low carb keto peanut butter bars without Xanthan Gum and/or arrowroot starch?
Yes! You definitely still can BUT if you plan on doing any amount of keto baking, these two ingredients (especially Xanthan Gum) are ESSENTIAL. (Xanthan Gum and Arrow Root Starch I use myself) For my Canadian friends you can order it HERE and HERE if you don't have them.
Xanthan Gum is a binder and pretty much makes any keto baked goods better in terms of texture. Brownies, cookies and bars will be chewier and bind together nicely without crumbling to pieces! This also works in cakes, muffins, pastries, breads and more!
So you can definitely bake this recipe by leaving it out, just know that your bars may be slightly less chewy and gooey!
As for the arrowroot starch, it's similar to cornstarch so you can use that as a substitute or just add an extra tablespoon of almond flour if you don't have either. AGAIN, just know the bars will be less “gooey”.
Do I Need To Use Both Sweeteners In These Keto Peanut Butter Bars?
No you don't! I use both the Brown Sugar Sukrin Sweetener and Monkfruit Erythritol Sweetener because I find they create the best flavour together. I use this combination in many of my cookie recipes as well (Here's an example: Keto Chocolate Chunk Cookies) ! But you can definitely just use one sweetener for the entire recipe instead. Low Carb Keto Peanut Butter Blondies
Serves: 16
Ingredients:
- 3/4 cup almond flour, 85g
- 1 tbsp coconut flour, 7g
- 1 tbsp arrowroot starch (or cornstarch or an extra tablespoon of almond flour)
- 1/2 tsp xanthan gum
- 1/8 tsp salt
- 6 tbsp salted butter, melted 90g
- 1/2 cup natural peanut butter, 120g
- 1/2 cup powdered monkfruit/erythritol sweetener, 96g
- 3 tbsp brown sugar Sukrin sweetener, 36g
- 1 tsp vanilla extract
- 2 eggs, room temperature
- chopped peanuts (optional)
Directions:
- Pre-heat oven to 350*F.
- In a bowl, mix together all dry ingredients except sweetener and chopped peanuts.
- In another bowl, add your melted butter, peanut butter, sweeteners and vanilla extract, mix well.
- Add your two eggs and use a hand mixer to blend together (or whisk well with a fork).
- Add your dry ingredients to the bowl and use a spoon to stir everything until well-combined.
- Grease a 9x9inch pan and spread the batter into the bottom evenly.
- Sprinkle chopped peanuts on top, then bake for ~20min or until edges are just lightly browned and begin to pull away from the sides.
Cool for 15-20min before slicing into 16 squares. Serve warm or chilled with an extra drizzle of peanut butter! Enjoy your Low Carb Keto Peanut Butter Blondies! (Tip: these also go great with low carb icecream on top!)
*Store these bars in an airtight container between layers or parchment or wax paper on your counter for up to 5 days or in the fridge for up to a week. Alternatively you can also freeze them for a later snack.*
