
Keto Birthday Cake Cookies
Ever felt like birthday cake in the middle of the afternoon on a Tuesday when it isn't even your birthday?
Because same.
That's why I decided to whip up these Keto Birthday Cake Cookies. These have all the reminiscent flavours of a birthday cake but in a perfect cookie portion size. (Not that you have to eat just one)
These keto cookies have a pretty funfetti center and a sweet glaze on top with of course..more sprinkles because you can never have too many.
I previously created a Keto Funfetti Mug Cake and a full-size Keto Funfetti Birthday Cake but with these cookies I wanted to make something that was a little different.
These Low Carb Birthday Cake Cookies are great for birthday parties or to make with your kids (because kids love sprinkles and rainbows and icing..and well, just about everything related to birthdays let's be honest).
The keto friendly sprinkles used in these cookies are AWESOME by the way. They are 100% sugar free yet you'd never know it. They are made by the company “Stoka Nutrition“.
I have not been able to find sugar free sprinkles anywhere else so I was ECSTATIC when I first heard of these. They act just like regular sprinkles and look beautiful!

Anyways, back to the cookies! These Keto Birthday Cake Cookies or Keto Funfetti Cookies..whatever you'd like to call them are seriously delicious and make one awesome easy keto dessert you can whip together whenever you get a craving!
Ingredients In Keto Birthday Cake Cookies
- Almond & Coconut Flour – I use the Kirkland Costco brand of almond flour (I buy it in bulk on Amazon or at Costco itself occasionally) and this brand of coconut flour for this recipe. As I’ve noted in many of my past recipes, the brand of almond and coconut flour can affect the final outcome of the recipe because absorbency can vary depending on how the flour has been processed.
- Powdered Monkfruit Erythritol Sweetener – I use the SoNourished brand for both granular and powdered sweetener and love it! The powdered is the best option for no-bake goods and desserts where you want a very smooth final product. I also used the powdered in this recipe because it works great in baked goods but ALSO creates perfect frosting every time! **UPDATE** lately I’ve switched over to THIS brand of powdered sweetener because of trouble ordering the first one so you can order whichever is easier for you!
- Xanthan Gum – This is used to create a batter more similar to that of white flour. It helps give keto baked goods a chewier dough-like texture.

Tips For Making Keto Sugar Free Sprinkle Cookies
- Make sure you press down your cookies slightly before baking because the hold their shape quite well and won't spread much.
- Do not over-bake your cookies! They may seem under-done but they are not. They will set fully once they cool.
Keto Birthday Cake Cookies
Serves: 18
Ingredients:
Cookies
- 1 cup almond flour, 112g
- 1/2 cup coconut flour, 56g
- 1/2 tsp xanthan gum
- 1/2 tsp baking soda
- 1/4 tsp salt
- 10 tbsp butter, softened 150g
- 1/2 cup powdered monkfruit/erythritol sweetener, 96g
- 2 eggs
- 1 tsp vanilla extract
- 1/8 tsp almond extract (optional)
- ~2 tbsp Stoka Sugar Free Sprinkles, 20g + extra for topping (use code SAMMYSAM on the Stoka Nutrition website for 20% off)
Glaze
- 1 tbsp butter, melted, 15g
- 1/4 cup light cream (18% cream), 60g
- 1/2 tsp vanilla extract
- 1/2 cup powdered monkfruit/erythritol sweetener, 90g
Directions:
- Pre-heat oven to 350*F.
- In a bowl, whisk together all of your dry ingredients except the sweetener and sprinkles.
- In another larger bowl, add your butter, sweetener and extracts. Beat until light and fluffy.
- Add your 2 eggs and beat again until everything is incorporated (don't worry if this mixture looks a little lumpy).
- Next add your dry ingredients to the wet and mix with a spoon until a thick dough forms.
- Add your sprinkles and mix once more.
- Form the dough into balls and place them on a greased cookie sheet. Flatten each one slightly (as you can see in the photo). Then bake for 11-12min. The cookies may be slightly golden around the edges but still very soft. Don't over-bake them! They harden once fully cooled.
- Let the cookies cool for 10min on their baking sheets before transferring them to a wire rack or plate to finish cooling.
- To make your glaze, mix together all of the glaze ingredients above until smooth.
- Spoon the glaze over each the top of each cookie and spread it in a circular motion. Then sprinkle extra Stoka Sugar Free Sprinkles on top of each one. Let the glaze set before serving. Enjoy your Keto Birthday Cake Cookies!
*Store these cooking in an airtight container between layers of parchment/wax paper in the fridge for up to 5 days or freeze them for later instead.*

The glaze didnt work at all. It was watery, lumpy and truly just horrible. 1/4 c powdered sweetener is both too much and not enough. Its bitter and runny. Any suggestions?
