
At about midnight last night I had the idea to create this recipe! I bought some giant shiitake mushrooms and thought I would make a breakfast using them since they may not be your first choice of things to eat early in the morning. But that may change..it's pretty delicious and really good for you, containing sauteed spinach, onion, tomatoes, egg white for protein(you could use a whole egg), and topped with goat cheese..Yum. Want to know how to make it?
Ingredients:
-1 large shitake mushroom, steam and innards removed
-olive oil
-cooking oil spray
-A large handful of spinach
-1/4 of a red onion, chopped
-2 cloves of garlic, minced
-1/4 of a tomato, chopped
-1/8 cup feta or goat cheese
-1 tbsp balsamic vinegar
-1/4 cup egg whites
-Salt/pepper
Directions: Start by brushing both sides of your shitake mushroom lightly with olive oil, set aside. In a pan over low-medium heat, add about 1 tsp olive oil then add your onions. After about 2-3min add your garlic and stir, cook for another minute then add your egg whites, just pouring over top of everything. Once the egg whites are almost fully cooked throw in your spinach and mist lightly with olive oil. Stir. After about another minute or so, when the spinach begins to wilt, add your tomato, balsamic vinegar and salt/pepper to taste, stir together once more. Turn the heat off to keep warm while on an indoor grill or barbecue, you grill your shitake mushroom on both sides for about 3-4min(total). Once grilled, sprinkle with salt and place on a plate topping with your spinach mixture and crumbled goat cheese. Enjoy! 🙂
