Super Low-Fat/Low-Carb Herb & Garlic "Mashed Potatoes"


Okay so the title may lie, but the flavours sure don’t! This mashed cauliflower dish will have your potato craving under control in a pinch while still getting a full serving of vegetables!

Soo these are actually really good when you want something potato like! They serve as a great side dish to any dinner! If you want to up the recipe for more people feel free!

Serves 1:
Ingredients:
1 cup cauliflower
1/2-3/4 tbsp Herb & Garlic Low-fat Cream Cheese
1 green onion chopped
1/2 tsp parsley
1/2-3/4 tbsp sour cream
1 tsp buttermilk(just enough to moisten batter, you could possibly replace with regular milk or more sour cream)
salt & pepper to your liking(I recommend more pepper than salt)

Directions:
Steam cauliflower for several minutes until tender and soft. Remove and pat as dry as possible. While still hot, place in a blender or food processor with the cream cheese, sour cream, buttermilk, parsley, half the green onions, salt & pepper(or you could season afterwards). Blend until smooth. Serve hot with additional green onion & if you’d really like to treat yourself, a few butter sprays. (**If the cauliflower has cooled too much simply reheat in the microwave for about 30-40 seconds).
