
I have always loved fried rice and when I decided to go Paleo, it was one of the things I knew I would miss most since my Mom makes it regularly for dinner. But as always experimenting and cauliflower have come to the rescue…This tastes so much like the real thing, I wouldn't be surprised if someone mistook it as rice.
This is a very simple quick side dish and tastes awesome with a side of chicken and broccoli!
Ingredients:
-1 cup raw riced cauliflower (I prefer using my slap chop because the pieces stay a bit bigger like rice but feel free to use a food processor if you are careful or if you are patient you could chop it very finely!)
-1 egg
-1 green onion (white & green part , chopped)
-salt/pepper
-1 tbsp soya sauce/coconut aminos (or to taste)
-1/2 tbsp olive oil
-dash of water
-optional: mushrooms to make mushroom fried rice!
Directions: Rice your cauliflower (break into chunks and chop with slapchop till the size of rice). In a small frying pan add the oil and heat over medium-low heat. Meanwhile, using a fork, beat together the egg with salt/pepper & a dash of water in a small bowl. Once hot add the egg and chopped green onion to the pan. Scramble! When the egg is almost fully cooked, throw in the cauliflower rice and stirfry for about 4-5 minutes or add soya sauce part way through by drizzling until cauliflower is brown and well coated. (You probably will want more than you think). Now serve hot! Delicious… 🙂
