I don’t know about you, but anything with “Salted Caramel” in the title immediately draws me in.. same goes for anything with “chocolate” in the title. So when you combine the two in a mini muffin tin… You most-definitely end up with heaven in a cup.

This recipe is super easy!

Each chocolate is high in fibre, low in carbs and down-right delicious.

Here’s how I made them:

Ingredients:

Caramel Layer

Chocolate Layer:

*Alternatively you can try using a very dark chocolate OR unsweetened chocolate melted and sweetened with a sweeter OR combine: 1/4 cup melted Coconut Oil, 1/4 cup Cocoa Powder, 2-3 tbsp sweetener of choice & 1/2 tablespoon Vanilla Extract

Directions:

  1. Combine all ingredients in a small pot
  2. Bring the pot to a boil, stirring constantly for 3-5min or until sauce starts to thicken slightly.
  3. Remove from heat and pour into a measuring cup.
  4. Melt the chocolate chips and coconut oil and stir until smooth (I just used the microwave, 1:30-2min)
  5. Lightly grease a mini muffin tin with coconut oil and spoon the chocolate mixture evenly into the bottom of each one (DO NOT drag it up the sides, I learned the hard way, lol) (I made 7).
  6. Freeze for 5-10min.
  7. Top the now hardened chocolate mixture with your caramel sauce, evenly dispersing it between all 6 cups.
  8. Sprinkle a small pinch of sea salt on each one. (optional)
  9. Freeze for at least 3 hours or longer. (Longer is ideal so they don’t split apart!)
  10. Pop the cups out with a knife and enjoy!
  11. Store them in the freezer in an air-tight container!

Do you miss chocolate? Do you miss topping your sundaes and desserts with globs of delicious, sweet chocolately goodness? Do you love peanut butter? Well look no further..I’m here to help you out! (Sorry that sounded like a terrible attempt at an advertisement ploy). But anywhooo, this perfect sauce goes great with any fruit, pancakes, frozen yogurt, oatmeal, greek yogurt, cardboard…basically anything you’d like it to go on! It’s just awesome. So if you love chocolate like me and you secretly eat peanut butter by the spoonful, this one’s for you.

Serves 8:

Ingredients:

-1/4 cup water

-1/4 cup cocoa powder

-1 tbsp PB2 (powdered peanut butter)

-3 tbsp Truvia sweetener(or another sweetener to taste!)

-optional: stevia or splenda to taste(adds a different flavour of sweetness)

-1/8 tsp salt

-1 tsp vanilla extract

 

Directions: Whisk all ingredients in a small small bowl until thick and smooth. Store in the fridge and use as needed! 🙂 Enjoy!

***Peanut Free Option: leave out the PB2 and boil all ingredients for about 3 minutes or until thickened to your liking!***

Lately I have been eating hummus like a mad women. Everyday when I get home from school I eat what seems like an endless amount of carrots and cauliflower with my spicy chipotle hummus. I swear, you’d better not come near me when I am eating my hummus because I WON’T share. I love that stuff. But..what happens when I run out of hummus half-way through the week and am frantically searching for a substitute?! Yup, I had to make this dill dip. Did I mention dill is one of my favourite seasonings? I love love dill pickle popcorn and dill pickle egg whites (yes I love dill pickle egg whites, call me weird). So what better way to have dill then in a delicious veggie dip. It tastes almost like sour-cream and onion dip! It is very low-fat and takes only seconds and a few simple ingredients to make. When I was younger my brother and I used to fight over the drumstick when we would have the chance to go out to KFC for dinner.(Yes I know it’s awful! But we went very rarely). It was always our favourite piece. I think many people prefer the leg because it’s just the perfect piece to pick-up and eat with your hands! And that’s the best part, no utensils required. So the other day I was trying to find new ways to eat chicken and discovered drumsticks at the grocery store(how could I forget about them??). I really love spicy food so I also picked up a new hot sauce since I am not a huge fan of “Franks” since I don’t find it hot enough. I ended up buying buffalo style woodland’s hot sauce. I tasted it and it’s super spicy! Perfect! But I know not everyone loves spicy so I added some ingredients to tone it down a bit and make it delicious for everyone.
