I have to say, I’m pretty proud of myself for this recipe. I just made, dare I say it..  The Best Keto Croissants.

These are NOT fat head dough. I made them with a flour combination that I’ve found to work really well in low-carb pastries.

These Keto Croissants are yeast risen and made mainly with, vital wheat gluten, almond flour, coconut flour and oat fiber.

The Best Keto Croissants have beautiful layers, just like real croissants and pull apart exactly how you’d expect. The cold butter and milk is the key to creating these layers along with folding of the dough.

I feel like I never learn my lesson with Keto Cinnamon Rolls. 

Seriously. The amount of times I have attempted different versions on this blog is actually appalling. Almond flour keto cinnamon rolls, coconut flour keto cinnamon rolls, protein keto cinnamon rolls…and now “Soft and Gooey Keto Cinnamon Rolls“.

But, with that said, I think the experimentation can be good. Every time I re-make them slightly different, I feel as if we progress to another cinnamon roll level.

The only issue is I can rarely get a good photo of cinnamon rolls.

I’m not sure if this is just my lack of photography skills in this area but does anyone else find cinnamon rolls to always look like a big gooey blob in every photo? LOL.

I can tell you that I took 124 photos just to get the few semi-decent keto cinnamon roll photos you see here.

Anyways, all this should really be beside the point.

You came here to see make some soft and gooey ket cinnamon rolls and I’m going to tell you how to do that…using yeast. Yup we are upping our game from baked cinnamon rolls.

These ones puff up a lot in the oven so don’t be deceived by the small pieces you cut them into. They bake nice and golden brown on the outside but remain soft and ooey-gooey on the inside. OK. Let’s get this straight. YES I have posted Keto Cinnamon Rolls in the past… have they been the BEST? No.

Have they been decent enough to share? Well, yes.

But have they truly filled the void when I’ve been craving gooey, soft cinnamon rolls with delicious cream cheese frosting..?

Not quite. 

That’s why I am here with fantastic news. I’VE FINALLY FIGURED OUT KETO CINNAMON ROLLS.

As I know your time is valuable, so I’ve done all the frustrating trial and error for you. 

I’m made almond flour cinnamon rolls, protein cinnamon rolls, oat fibre cinnamon rolls, cinnamon rolls with baking powder alone, cinnamon rolls with a combination of almond and coconut flour, disaster cinnamon rolls that didn’t even make it to the blog…you name it I’ve tried it. 

I just could NOT get cinnamon rolls right and it was driving me INSANE. 

I’m serious guys. When I can’t get a recipe idea of mine to work, I just keep trying and trying and trying because I re-fuse to fail or settle for “meh, it’s okay”. 

So when I had a sudden cinnamon roll epiphany at 2:00am while watching pointless youtube videos, I knew I had to get to work straight away. (No joke, I stayed up writing my recipe over and over and didn’t sleep, lol). 

My epiphany was the fact that cinnamon rolls are meant to be LIGHT and FLUFFY and GOOEY. 

Not crumbly, dry and tough.

I’m not kidding when I say this is the BEST Low Carb Banana Bread I’ve made..honestly it’s better than some traditional banana breads. It’s virtually sugar free and delicious!

I have many friends and family members who would agree, haha.

It’s super soft and moist with a REAL banana flavour.

I get that people like to pass off low-carb bread with artificial banana flavour added as banana bread but honestly for me that just doesn’t cut it.

I get that bananas are not low carb but when used in a large batch of banana bread and subbing a bit of the bananas for extra butter.. I was able to get a bread that tastes like traditional banana bread but is only 6g of NET carbs and 2.5g of sugar per slice!

I’d have to say that’s pretty darn good if you ask me! Plus if you are going to get any small amount of sugar from anywhere. Why not get it from something as natural as fruit.

The perfect low carb breakfast or keto dessert.

I made these keto chocolate banana muffins in place of my childhood favourite “Quaker Double Chocolate Muffins”. These were the kind of muffins we only got to eat on special occasions like sleepovers and birthdays. My friends and I all LOVED waking up to these warm, fudgey, rich chocolate muffins. It was tradition.

But the best part was that my mom always added extra chocolate-chips and mashed banana to the original recipe.

This made them taste 1000x better in our opinion.

Have you ever gotten frustrated because as much as you love the keto way of eating.. you can’t help but feel just a little jealous when you see someone eating a delicious sausage breakfast sandwich with that nice buttery biscuit on top..Sure you could just eat the sausage, but what fun is that?  That’s no breakfast sandwich.
