
Keto Strawberry Marshmallow Chocolates! Such a fun and cute little recipe! My Mom gave me these chocolate molds for Christmas knowing I've always wanted some and have used mini muffin tins for AGES.
I always figured I could get by without them but MAN was I wrong. These molds are 1000x better than using mini muffin tins. They are so non-stick and it's way, way easier to pop the chocolates out just 10min after refrigerating (no freezing required!)

They also look so much cuter! I liked mini muffin tins for Reese's style chocolates or caramel cups but for other recipes like this one, the molds just make so much more sense. Plus, these molds felt perfect for valentines day!
The outer coating of these keto chocolates is made with stevia sweetened chocolate chips (I use the Krisda brand, which is readily available in Canada but you can also use Choc Zero or Lily's Chocolate Chips OR even 90% dark chocolate).
The melted chocolate for the coating is mixed with a small amount of coconut oil to get it slightly smoother and shinier. It also creates this amazing melt-in-your mouth quality that you don't get with the chocolate alone.
Then the inside of these chocolates was actually a funny experiment. Originally I had planned to do no coating and used a sugar free strawberry jell-o mix rather than pudding with cream cheese and additional gelatin but that was quite the disaster.
The candies were sticky and only popped out nicely if I froze them.
So I decided to try again with a chocolate coating and using sugar free strawberry pudding mix made by Simply Delish instead.. because it is valentines, and who doesn't love chocolate covered strawberries??
And lo-and-behold, it works out SO much better! These came out super cute. I like how the filling has a bit of lightness to it. That's why I called these keto strawberry marshmallow chocolates.
They actually really remind me of Built Bars (my absolute favourite low carb bars).
The filling is made up of cream cheese, the sugar free strawberry pudding mix, no sugar added strawberry jam and finely chopped pieces or real strawberries. So lots of strawberry! LOL.
Overall, these chocolates are great if you need a simple, fun keto valentines dessert or even just everyday treat that you can whip up quickly and easily impress people! Especially if you use some pretty silicone molds.
Don't like strawberry? You could even try these chocolates with a vanilla or chocolate pudding mix and I'm sure they would still be delicious!
Ingredients In Keto Strawberry Marshmallow Chocolates
- Stevia Sweetened Chocolate Chips – I use the Krisda brand (Canadians should be able to buy them online or in the health section of most grocery stores. For those in the US, you can use Choc Zero, Lily's or just regular 80-90% dark chocolate!)
- Coconut Oil – I use this one!
- Cream Cheese
- Sugar Free Strawberry Pudding Mix – (I use the Simply Delish, keto friendly brand)
- No Sugar Added Strawberry Jam – I use the ED brand here in Canada but any will do! You could even make your own!
- Strawberries

Tips To Make Low Carb Strawberry Marshmallow Chocolates
- If you find your chocolate isn't coming out as smooth as you like, simply add another teaspoon of coconut oil. Just keep in mind, the more coconut oil you add, the more easily your chocolates can melt when held.
- Feel free to switch up the filling with vanilla or chocolate pudding mix instead!
- Silicone molds work best for these chocolates but if you don't have any, you can also use mini muffin tins!
How To Store Keto Strawberry Marshmallow Chocolates
- Store these chocolates in the fridge in a ziplock for up to a week OR freeze, double bagged in ziplocks, then thaw them at room temperature before serving again.
- These chocolates can remain at room temperature for quite some time, just note they will be more likely to melt in someone's hands when served from room temperature. To avoid this, you can try adding less coconut oil to your melted chocolate.
Keto Strawberry Marshmallow Chocolates Recipe
Serves: ~18-20 chocolates
Ingredients:
- 1 1/4 cup stevia sweetened chocolate chips, 310g
- 2 1/2 tsp coconut oil, 12g
- 1/2 cup cream cheese, softened, 4oz/120g
- 1 packet sugar free strawberry pudding mix (I use THIS keto friendly one!), 1.7oz/48g
- 2-3 tbsp no sugar added strawberry jam, 45g (optional)
- 2-3 large finely chopped strawberries, 50g
Directions:
- In a microwave safe bowl, combine the chocolate chips and coconut oil and microwave for 45s-1min. Stir well until the chocolate chips have completely melted.
- Place silicone chocolate molds on a baking sheet.
- Pour chocolate into the bottoms of silicone molds. Spread the chocolates up the sides to coat them as well. Reserve half of the chocolate mixture for topping.
- Place the baking sheet with the moulds into the fridge to set for ~10min.
- Meanwhile, in another bowl, beat together the softened cream cheese and sugar-free strawberry pudding mix until combined.
- Add the jam and beat again until the mixture is crumbly but holds together when pressed with your fingers.
- Stir in the strawberry pieces.
- Remove the chocolate molds from the fridge. The chocolate should now be solid.
- Roll some of the jell-o cream cheese mixture into a small ball and then press it into one of the chocolate molds (enough to fill it about 3/4 the way to the top). Repeat this process for the rest of the molds.
- Re-heat the rest of your chocolate for a few seconds and stir it again if needed. Then top the strawberry layer and fill the rest of the mold with chocolate by drizzling, then gently spreading chocolate on top. Repeat with all of the chocolates.
- Place the chocolates in the fridge once more to harden (for about 10-15min).
- Pop the chocolates out of their molds once they have set, plate and serve! Enjoy your Keto Strawberry Marshmallow Chocolates.
