Keto Morning Glory Muffins

These delicious Keto Morning Glory Muffins are easy to make and taste AMAZING. They are super soft and moist in the centres with the perfect crisp streusel topping thanks to the crushed up Toasted Almond :Ratio Bars we used in this recipe.

My family strongly approves of these! They have the perfect amount of sweetness and heartiness. They are filling and very satisfying.

The base of the muffins is my favourite almond flour and coconut flour blend along with some fantastic add-ins like arrowroot starch and xanthan gum to help improve the chewy texture and lightness of the muffins.

These muffins also contain flax meal which gives them more of that classic Morning Glory flavour.

In terms of dry ingredients, these muffins contain coconut oil, orange zest, orange juice, shredded carrot, eggs and sour cream. These ingredients, when combined provide loads of flavour to the muffins. I was actually ecstatic with how MUCH flavour these muffins pack!

Not to mention you're also adding classic spices like ginger, cinnamon and allspice.

Finally, as mentioned above, these muffins contain crunchy bits of chopped up Toasted Almond :Ratio Bars. These make for a PERFECT streusel topping. 

I've tried streusel toppings in the pas and honestly none have ever measure up to the topping on these muffins.

The bars themselves are made in Canada! They are a new company that just recently launched. The bars are crunchy and remind my of the traditional granola bars I used to eat.. 

But these bars are much more keto-friendly and natural in terms of their ingredient list. They contain:

ALMONDS, PUMPKIN SEEDS, SOY PROTEIN ISOLATE, COCONUT OIL, ERYTHRITOL, WHEY PROTEIN ISOLATE, CHICORY ROOT EXTRACT (INULIN FIBRE), CINNAMON, SEA SALT, STEVIA EXTRACT, NATURAL FLAVOUR, ALMOND EXTRACT.

That's an amazingly simple ingredient list! These bars really are about as natural as you can get! 

They come in two flavours; Toasted Almond and Lemon Almond. This recipe uses the Toasted Almond :Ratio Bars BUT there may be a recipe coming up that uses the Lemon Almond :Ratio bar in an equally delicious way…hint, hint.

Tips For Making Keto Morning Glory Muffins

  • To get your :Ratio Bars chopped finely, you can either use a large, sharp knife and do it by hand OR use a slap chop or food processor instead if you own one! You want the bars chopped into pieces that seem suitable for a crumble topping.
  • If you do not have almond flour, you can try making these muffins with 10 tbsp coconut flour (70g) (only add more if needed).
  • If you do not have coconut flour, you can try making these keto muffins with 1 3/4 cups almond flour (200g). 
  • If you do not have flax meal, you can try replacing it with 2 tbsp oat fiber or psyllium husks OR you can simply replace it with ~1/4-1/3 cup almond flour or 1 -2 tbsp coconut flour (your batter should be quite thick)>
  • If you do not have Sukrin Brown Sweetener, you can also use regular powdered monkfruit/erythritol sweetener OR another keto friendly granulated sweetener. To add the brown sugar flavour, simply add 1/2-1 tsp molasses to the batter as well. 
  • If you do not have arrowroot starch, you can substitute cornstarch OR another 3 tbsp almond flour. (This ingredient helps to keep the muffins moist and give them a lighter texture)
  • If you do not have xanthan gum, you can still make these, they just may be a tad more crumbly. You can try subbing 1/2 tsp ground psyllium husks or 1 tsp cornstarch but I highly recommend purchasing xanthan gum if you plan to do any amount of low carb baking!

How To Store Keto Morning Glory Muffins

  • Store these muffins in an air tight container at room temperature for up to 4 days OR freeze in an airtight container or large ziplock between layers of wax paper.

Keto Morning Glory Muffins Recipe

Serves: 10-12 Muffins

Ingredients:

Directions:

  1. Pre-heat oven to 350*F.
  2. In a bowl, whisk together the dry ingredients up to and including almond flour, coconut flour, flax meal, arrowroot starch, baking powder, baking soda, xanthan gum, ginger, cinnamon, allspice and salt. almond flour coconut flour arrowroot starch
  3. In another bowl, add the coconut oil and melt it if needed. Add the eggs and sukrin sweetener and whisk everything to combine. (If you've whisked it well, small bubbles should form at the top of the mixture).eggs coconut oil shredded carrot
  4. Next add the sour cream, shredded carrot, orange juice and orange zest. Whisk again until everything is fully combined.
  5. Add the dry ingredients to the wet mixture and use a spoon to mix well until a thick batter forms. keto muffin batter
  6. Mix 1/2 of a chopped :Ratio Toasted Almond Bar into the batter. keto granola bar keto carrot muffin batter
  7. Line a muffin tin with 10-12 muffin liners. Grease each liner using additional coconut oil (I use the spray can to make this easy).
  8. Use a muffin scoop to evenly disperse the batter among the liners. keto breakfast muffins
  9. Sprinkle the extra :Ratio Toasted Almond Bar over the top of the muffins (you can also gently press the pieces down to help them stick). keto carrot almond muffins
  10. Then bake the muffins for 20-23min or until a toothpick comes out relatively clean and the tops are a light golden brown. Serve warm as they are or topped with a pat of butter! Either way these Keto Morning Glory Muffins are delicious!

  • 1 cup almond flour 112g

  • 2 eggs room temperature
  • 3/4 cup sukrin brown sweetener 144g
  • 6 tbsp sour cream 90g
  • 1/4 cup shredded carrot 60g
  • 1 tbsp orange juice
  • 1 tbsp orange zest
  • 1 1/2 :Ratio Toasted Almond Bars finely chopped

Instructions
