Keto Cappuccino Cupcakes…now you can have your coffee and eat it too..or something like that.
These combine two of my favourite things…COFFEE and DESSERT. A fluffy chocolate and coffee cupcake topped with a rich coffee flavoured frosting..Delicious.
These remind me a lot of Duncan Heinz chocolate cupcakes (which I used to love) although I never loved the traditional frosting you could also buy. I found it insanely sweet without much else to offer.
That’s why I designed this frosting to be full of flavour. It’s a combination of cream cheese, butter, coffee and melted chocolate…sounds good right? Well it’s insanely good.
As in, I may have licked the bowl one too many times while making these…

I’m going to be honest, I wouldn’t have made these Keto Carrot Cupcakes normally. I’m not sure why but the idea for carrot desserts never popped into my head. Not because I don’t love them (trust me, I love me some good carrot cake) but just because I never thought I could create a keto dessert that could compare with my beloved full sugar/white flour carrot cake.
But when I saw the excessively large bag of carrots my Dad bought that were definitely going to go to waste I figured meh, might as well give my carrot cupcake idea a shot.

KETO CHOCOLATE BANANA MUFFINS
The perfect low carb breakfast or keto dessert.
I made these keto chocolate banana muffins in place of my childhood favourite “Quaker Double Chocolate Muffins”. These were the kind of muffins we only got to eat on special occasions like sleepovers and birthdays. My friends and I all LOVED waking up to these warm, fudgey, rich chocolate muffins. It was tradition.
But the best part was that my mom always added extra chocolate-chips and mashed banana to the original recipe.
This made them taste 1000x better in our opinion.
